Originally it was because Yvonne Strahovsky is amazing, but Miranda turned out to be a really fun character when the dialog was about more than her ass.
Every scene with her ended up making me smile, and the romantic conversations made me grin with their cheesy banter.
And then in ME3, I felt pretty driven to protect her.
More so than earth.

Originally, I didn't want to have a LI in ME2. Then LotSB was so d***d good, I had to restart and pick Liara. That one DLC changed my view of what a video game can be. Loved every second of it.

I bromanced Garrus, because who better for a best buddy?

And then I tend to favor Tali, because Ashley is okay but her anti-alien state early on annoyed me a bit. Liara looked like a kid, so I wound up romancing no one in the first.

Second game Thane and Garrus are awesome, but I always maleshep, so I just friend them. Miranda annoyed me with her "I'm so perfect and it's so hard" routine with gratuitous buttshots. And Jack was just too emotionally wounded for me to feel okay with that. I think she needed a father figure/brother figure more than a guy out of my Shepard.

So Tali, because she was just a fun, honest, nice girl.

MaleShep LI: Ashley, because I accidentally dialogue. I also accidentallied  Liara, which was bad. I hadn't really decided who to pick, so in the end I chose randomly for Ashley.
MaleShep Bromance: Garrus, self explanatory.

FemShep LI: Garrus, because I simply like him. He's a good guy and deserves it.
FemShep Bromance (Sismance?): Hard one... Maybe Wrex... or Grunt...

Kaiden was a putz, which is why I left him on Virmire, and blue chicks are hot

Miranda
Jack
Tali
Kelly

But I have not yet had the stomach to start ME3 again so I have yet to see those romances play out to fruition.

Why'd I pick Jack, the punk as f**k Natalie Portman doppelganger who "may be the most talented biotic of her time"?

I'm a sucker for riot grrls, Natalie Portman, and people with exceptional traits, so Jack captured Shepard's heart the very moments she escaped her containment cell and destroyed several Ymir's by herself.  <3

Ash, I saw the other two "major" love interests more as little sisters, and besides, I do like Ash on a personal level, I mean, sure she's somewhat of a racist and fairly distrustful, but I can look past that. All in all, I'd have to say that she's my shipoopi.

Tali has always been my favorite character in mass effect, in one she was always in my squad. When two came around I said I wouldn't buy the game if she wasn't present as a squad mate and when I learned she was a romance I jumped at the chance in did a sheploo playthrough for the first time and its all I've been doing sense. I've always been a sucker for the female techie.

I found Tali to be one of my most favourite characters in the first game. When I found out she could be romanced in ME2 I JUMPED at the chance, her personality is just so innocent, cute but tough at the same time. :). And it doesn't hurt the cause with DEM HIPS.

hmmm i dont know why i picked ashley, the poetry thing she has in mass effect 1 is kinda cute so :) i didnt really interact with rest of my crew except for wrex and garrus haha so i went for ashley :)

Something about the way she got flustered and cute when the flirting started... And I think I can actually hear her blush. Plus, she seems like the type of girl I'd actually have things in common with.

Whatever anyone else says, for me, Tali is cannon. :)

And Garrus is my bro, obviously. I can't think of anyone I'd rather have watching my back.

Liara in ME3 - I picked Liara in ME3 because head beats tails. I flipped a coin to decide.

I originally romanced Kaidan back in ME1, but Garrus was always my favorite character. So when I heard that Garrus was romancable in ME2 I created a new Shep, Sara, that didn't romance anyone in ME1 just Garrus in ME2. Roleplaying it in a way that Garrus was always her best bud, but when he took that rocket to the face she realized that it was more than friendship that she felt for him. She then spends a good portion of the game coming to terms with these feelings. Should she tell him or not? Could he ever feel the same way about her especially when they are so different physically? Only when she walks through the remains of the Normandy SR1 does she decide to tell Garrus about how she feels. She died once, and she doesn't want to die again with any regrets. The Garrus romance and how it progresses across three games is one of the best I've seen. Friend, Lover, Bondmate.

It's funny because, like I said, I created Sara for the sole purpose of romancing Garrus, but she completely took on a life of her own. Sara is my favorite of my Shep's. Personality and skill wise, Sara and Garrus are a perfect fit.

I picked Liara because she obviously wanted me.

I picked Jack because she reminded me of one of my more creative ex's.

I'll probably go with Liara again this time because I'm the sentimental sort.

In the first game I tried to romance Ash and failed so hard that I accidentally romanced Liara. This really upset me as I viewed my shepard as being very cautious towards aliens. Then when I saw the various character arts for the new crew in ME2 I was certain I would hate Jack. Little did I know that I would end up falling so hard for Jack that I cannot do another playthrough of mass effect as a male shepard. The first was just 2 perfect to me.

To top it all off I even named my shepard Jack so I find it hilarious that the two people in love that save the galaxy together are Jack and Jack. Its like they knew how much effort it was going to take to stop the reapers and formed Jack squared to do so!

I am also very pleased to see that Jack and Shepard are the classic couple that is kept apart by war. I found that much more touching then i could have imagined.

I picked Ashley in my first playthrough 5 years ago. My original reasons at the time were probably something like "well, she's human" and she was also the first girl to join the squad that I was able to start having conversations with and connecting to. I didn't really like Liara all that much in my first playthrough (that opinion changed, of course, and now she's one of my favorites) but I still had that connection with Ashley.

Sure, she's flawed, and for some reason a majority of people seem to hate her for reasons that aren't even that true, but that's kind of what I like about her. I like that she was opinionated and a soldier, and didn't really take all that much crap from anyone. Which is why I kind of hated her redesign in Mass Effect 3. She still had some good moments, but the changing of her appearance when it wasn't really necessary just felt like a betrayal of who her character was in the first game.

But yeah, I'll always have the connection to Ash as a love interest.

I stuck with Liara through all three games. She is the most genuine character and I just can't find anything annoying or negative about her.

It's a family guy reference.
What I meant by her being somewhat racist is that in ME1 she's fairly uncomfortable around aliens. I have an open mind to people, if I like their personality I have no issues with them.
Yes, I overuse the comma, was one of the examiner's complaints when I took my english exam. I managed to get a 40 word sentence in one of the paragraphs I wrote...
