I think the idea of the "bittersweet" ending is the way in which the cycles are ended forever whatever choice you make.
That's pretty sweet, nobody's ever going to have to go through the horror of being harvested ever again.
Bitter part is the whole ability of the galactic civilizations workings are basically destroyed in the process. This seems like too big a phyrric victory. Even though we won this battle, we still lost the entire war.

The emotional aim of the endings is not the main concern of most of the backlash. Sure, everyone 'wants' a happy ending, but that's because we care about the characters. If we get a sad ending, we will feel sad, as intended emotionally. The plotholes and the fact it doesn't make sense is the problem!

We got bitter, no sweet, no answers and an almost uniform ending that not only ignores and negates our choices; but then directly refers to them being forgotten in the mists of time.
Not the ending we were promised; i.e. 16 different tailored endings referring to personal choices and military decisions from the entire trilogy.

Long before the final push to the Citadel, there were so many examples of sacrifice and bittersweet moments.
If they had even ended the game after the scene with The Illusive Man, then they would have achieved what they wanted. Instead they pushed beyond that so that all the previous sacrifice and bitter sweetness was forgotten. In its' place was just a sense of hollowness and depression.

I've said it before but it bears repeating: any ending you could achieve was always going to be bittersweet at best. In any playthrough you always experience great loss, both on a larger scale and personally. Your Shepard and anyone you may care about are always shown to be suffering. These things would not be negated if, for example, your Shepard survives, gets to carry on life with their love interest and the galaxy gets a chance to repair itself.
That being said, the ending that was forced on us all doesn't even come close to conveying the sentiment the writers apparently wanted it to.

Bittersweet would have been fine. I worked out that half way through the game, Shepherd had to die. It was the perfect ending. If you look at the truly excellent DA:Origins, you have the happily ever after ending (and its good), but the best endings are the sacrifice ones (I found the Loghain one the best). This ending was not bittersweet as its just bad...

Frankly the "Shepard must..." is BS to me, it can be one of the options -sure. But that you have to sacrifice yourself? Shouldn't that be your choice?

Shepard living happily ever after would be a bittersweet ending. Billions dead, Earth scorched, Ashley, Mordin, Thane, Legion and Anderson dead... Not to mention all Shepard's hardship and suffering. That's enough bitter for me.

Perhaps I'm off base here, but even a happy ending would be bittersweet to me because I'd know that a series that I loved so much was over. As an anime fan I get this all the time. I feel good about reaching the end of a series, but it's always a downer to know that there is no more.
