Just wondering if I should do them or not; has anyone noticed any impact that they have in the game?

Yes, they do, in a sense. Usually they update other assets you already have.

An example is, there is a side quest where you rescue Elcor soldiers from their homeworld. If you do that, your alien fighting force gets improved and there will be an update under that section. At least a fourth if not half of the side quests do something like that.

Sorry, I completely misread your post. Not only did I thought you meant side missions as a whole, I didn't see ME2.

I don't think they have any real influence, none that I've noticed. If you were planning on doing another play through but wanted to speed run it, you can probably not do any of the N7: missions and be just fine.

Sorry for the confusion.

DLC missions do...but not the N7 missions. Side quest from ME1 do have an influence.
