ME2 - Not very glitchy, and I liked the upgraded graphics from ME1 graphics. Never crashed once.
ME1 - Had some issues but was a GREAT game with a GREAT story
ME3 - I don't even know where to begin... sooooooooo many glitches. Crashed at least 10 times on my new Xbox.

As is:

ME1
...nothing ...
...nothing ...
...nothing ...
...nothing ...
...nothing ...
ME2
ME3

With a proper ending? Swap ME2 and 3 and move ME2 up one place.

1) ME1 - Best story, best characters, best antagonists
2) ME3
3) ME2 - Story got lost, felt like a bridge game made up of a bunch of side missions to pass the time before ME3

Even without the ending of ME3 this list would not change,

ME2/ Loads of interesting and varied companions, best story telling, combat improvement, needed more rpg elements

ME3/Fantastic combat and more RPG elements involved in it with weapon upgrades and armour, the game a bit short, less interaction with companion[though loved when they interacted with each other], so-so ending, multiplayer surprisingly fun

ME1/ Great story telling and world. introduction of Garrus, combat poor, loading bad, not having the right skill to achieve thing, planet exploring was fun, inventory annoying

Main Story:
ME1
ME3(WITHOUT the ending)
ME2

Side Quest Stories:
ME3
ME1/ME2(ME1 ad better stories, but ME2 had more uniqueareas, and not cookie-cutter dungeons)

Characters:
ME3
ME1
ME2

Gameplay:
ME3
ME2
ME1

Role-playing and immersion:
ME1
ME3(EDIT: WIthout the ending of course)
ME2

DLC:
ME2(Overlord and Shadow Broker alone is a reason to play the game)
ME3(Javik is da man)
ME1(Nothing new, and Pinnacle Station is WAY overpriced)

Though ME2 scored the lowest, it is still the game I have played the most(25 times), and I love them all equally.

ME2 vs. ME3 is a tough one, Currently I'd lean toward putting ME3 on top, simply because ME3 has the benefit of being able to kick all the tables over without having to worry about the effects on importing Shepard to yet another game.

ME1 definitely comes in last place. As good as it was, the next two are better.

I'm going to say ME 3 for the top spot. Me 2 in second place (as stupid as the whole, everyone's a badass and lets all swear and have tattoo's artificial toughness and coolness was) And sadly ME 1 in last place. Though it is certainly not a bad game. So:

ME3
ME2
ME1

1. Mass Effect III. (Loved it, even the ending(s), altough actions having bit more effect would have been nice.)
2. Mass Effect
.
.
.
.

3. Mass Effect II. Hated the story, which was basicly just group gathering for a boring mission with the dumbest boss fight ever.

ME3 was the best of the 3 games. ME1 the worst.

But if you just look at it from the story, ME2 was the best and ME3 the worst. ME3's story felt very rushed. It didn't have the same kind of epic feel that 1 and 2 had. But overall game play, ME3 is much much better than the other 2.

Strangely enough, I share the OP's preferences: 2>1>3. Odd, given how ME2 is supposed to be the least RP-oriented, has the worst reputation system, and I am a hardcore RPG fan...

2, then 1, then 3.

One looks dated now, but it was amazingly fresh when it came out. The sequel over-simplified some things, but the gameplay was noticeably better, as were the graphics, the sound, technical performance, and so on. Apparently a bunch of people on the forums hate it, for some reason I've never totally understood.

Three has some baffling design choices (e.g. war assets issues, the journal, etc.) and glitches that hold it back. It's certainly not a bad game by any means, but it's a frustrating one - comparable to Dragon Age 2, which also wasn't so much bad as odd.

Despite all the Omnigel'ing and the Mako and reused planet locations;
I do rank ME1 better than ME2 (which had better graphics and combat, but less RPG, and not as interesting story).

Had ME3 had an ending; It'd rank highest, but well - now it's worse than ME2 by far.

So ME1 > ME2 > ME3

What? I can't even play my Shepard in ME3, how is that supposed to be superior role playing? How can I feel immersion when my Shepard have to agree to one of the choice given by a reaper? And your choices during the game affect almost nothing in the end of ME3.

Good point there, but I am one of the people who dont think of the ending as a part of the game. I just felt Shepard was more of a person this time over, showing actual feelings. I played as a paragon, so I can get why renesheps feel this is not something for them.
It is a matter of personal preferences.

I also feel that conversations are more dynamic, thogh it came with the cost of more dialog options.
