I want to avoid ending spoilers here as I don't want to ruin the game for myself. I am guessing, although want no confirmation, that there will be some kind of big ending battle. This thought leads to my question.
I have tended to travel with a set party and am currently around level 19. I have been beefing up my other party members with armor/weapons that I find even if I really don't intend to play them. My question is whether any of this is worth it if I am not going to play them? The only possible reason it could be is if somehow they are involved in a late battle and thus will be impacted by what they are wearing/carrying?
So the basic question is whether I can stop bothering to beef up party members I don't plan to use, or should I continue this practice?
Is it worth buffing up party members you won't use?

I found it not absolutely necessary on hard, but it helps. Equipping some with something better than the starting gear is advisable. It doesn't need to be high-end equipment and you get tons of loot throughout the game.
There is also another section before the endgame, where your other party members may come in handy.

No. The section he is talking about can be done with the characters basically naked on Nightmare, as long as you have healing pots stockpiled and a few basic weapons for them to equip.
So if you come into situation where selling off their equipment will give you just enough gold for a sexy item, don't be afraid to.

Equipping party members your not using is also a handy way to store gear without havig to flog it

Thanks for the additional info. No sense in storing gear I am not going to use. Of course there is very little of value to actually buy in this game, but I am always one to horde everything and have a ton of stuff left over after the game ends.
