One thing that everyone forgets to mention is that they should create chokepoints and fallback points; it's a lot easier to control the enemy's flow of troops rather than to stop them outright. Especially with brutes and Banshees. Unless your whole team is focusing fire and combined arms, it's a ton easier to single those enemies out and allow a single person (Like a human Sentinel) to take aggro and pull that enemy aside and destroy.
Understanding your tech bursts/biotic combos will make or break a team dynamic.
Understanding your maps, and the types of people you play with will ensure your success.
Bottom line is that you should try a gold run with either people you know or at least once with pubs. You should go in not expecting anything but to fail. Failure is valuable when gauging your readiness, build and mentality-wise.

I don't really agree with your view of the human sentinel....at least not where you compare him with an adebt.... asari adebts do the same thing plus awesome cc which the sentinel doesn't have...Sentinels in general can do everything depending on which species you choose but they are never better then the original class they are immitating. But the point with chokepoints and fallback points is true so I will add it later.

Think of it this way:
-If you're playing against Reapers, you rarely have a need for Stasis.
-Therefore, you can have an extra warp/throw character with full fitness and alliance training for when you want to fight Reapers instead of Cerberus (who get smashed by stasis bubble).
The Human Sentinel with a respec card is like having an extra build slot for your Asari Adept where you didn't spec for stasis, and stasis isn't nearly as useful when you're not fighting Cerberus.

Not sure if you have played against Reapers on gold allready but the only dangerous thing about them are the cannibals and marauders.... You spent most of your time moving around chaining combos on brutes and banshees because they are closing in and then you are open to fire all the time so often its a life saver to just bubble them while you deal with the meele enemies. Also full points in push or fitness don't help you at all.....

One thing I started using recently is leaving the group to cover the flank, near a known spawning area, but always keeping a clear route back and closing distance sufficiently so that enemies wouldn't come between us. This way I can stagger the enemies advance and always be back with group in few seconds.

They can set up combos on anything and detonate them with Throw. A human sentinel can combo on an Atlas for example and hurt everyone around it.
Human sentinels, when specced out of tech armor, are NOT a jack-of-all-trades class. They are simply a human adept with Warp/Throw instead of Warp/Singularity.

They can also soak up more damage, and carry relatively "heavy" assault rifles with a 200% cooldown.
A very very useful player to have on your team, especially if you're up against an unknown enemy.

I love being the underdog and so, I'm trying to put a gold team together because it's hard to find good teammates,
you might ask experience ?,
well I played the demo of Mass Effect 3 before it even came out, before I made THE BLUE KINGS- only been around for almost 2 years, there was one other called coolsnakez -which had around 5 years and also had an N7 rank around 800
You might want to know the classes I use for Gold:
soldier Geth juggernaut - melee damage - Tank
soldier Vorcha - flamer - crowd control
sentinel N7 Paladin - Cryo explosion - crowd control

MELEE Jugg? Nope. Wouldn't play with you even if I was on the same system. Total waste of a good character, and also a waste of a Lobby slot. L2P. A good Jugg never needs to melee. A bad Jugg always does. Juggernaut melee and damage do not go in the same sentence.
