 I'm on my first playthrough of ME1 and have set most of the options to 'easy' until I get a feel for the game.  So, levelling and weapon usage (except my own) and squad defenses are automatic.  I understand the different abilities of the squad members, but constantly choose the same two to accompany me.  Why?  I've armed them with my hand-me-downs so they're better equipped than the others.  But as I advance, I'd like to match squaddies with encounters --- but how to know?  Maybe I should save-game and replay the same encounter multiple times to see how the others would handle themselves?  Can I really afford to keep all 6-7 of the squad up to par?

You can only select your squadmates once per mission/planet, you can't switch them between fights. Just pick a balanced team that can face any type of encounter.

So, basically I'm doing right. Just select the ones I like, and stick with them?

Yes, and as to equipping your squad mates, you'll get more than enough money to afford the best equipment for everyone.

No need to stick with them for the whole game (though that can get you some bonuses from achievements), but stick with them for a whole mission, yes.
