So...i was wondering whether we will be able to start a new game with our old character after we beat it the first time... like with our attributes and stuff

I don't believe it had a new game + feature.
It does have the separate origins so events may vary significantly if you play a different origin.

indeed, It looks like they've put all their effort into the 'Origins' side of things, to make it a game where you start multiple characters from scratch, rather than play through at high level a second time.
I don't think you'll feel weak especially, as different character backgrounds will be played mainly to unlock different aspects of the world experience, with different races and classes treated differently by NPCs throughout.
