what good do gems do? theyre not marked as gifts or anything. are they
used for item crafting or what? im talking about the ones that show up
under 'other' stuff like emeralds, topaz, malachite, quarts, ect

im also curious about blank vellum and wolf pelts

vendor trash also once you have the dwarves, you can give gems in your camp for exp

By "vendor trash" I mean sell them. The best way to get exp. by turning stuff in is buying elf root from the vendor in the dalish area and turning that in. I find the exp. gain from gems to be so low as to be not worth it.

You'll want to keep at least 10 Garnet stones, or at least sell them in your camp. The exp. stones are sapphire, topaz, malachite and quartz. I didn't find any use of the others. Same for private documents, chalices etc.
