What I liked about the ME endings and how they could be improved

I didn't really like the endings of ME3 either, but not for the same reasons that everyone else seems to say.  I'll start with what I think BW did right here.

If anything the ending was faithful to the rest of the series and to itself.  People have Complained that they only get to choose what color explosion they get and that it was 95% the same. That simply isn't true, what color explosion has huge differences in what the galaxy will be like in the far and near future.  Did Earth survive? Are the Reapers now under Shepp's control forever?  If so, would he ever use them to help the survivors like a living god?  How has synthesizing all in the galaxy  affected how we interact?  These differences in endings are more than just "what color explosion"  but completely different in terms of future ramifications of the whole galaxy.  This is especially true if BW decides to continue the series (please?).

And just to remind everyone, you had to pick what color explosion you got in ME2. Blue to give to TIM and orange to blow it up.  Everyone loved that ending, I really don't get why the ire now.  If anything, this game gives you three choices, the "best" one involves a lot more work too (ie more assets).

I am so happy that the mass relays are destroyed. As Sovereign said in ME1, the mass relays were a trap, a means to steer civilizations in certain direction. Their destruction was symbolic for the present races to find their own path. A desire expressed by the geth and Leigon in ME2 (see? consistency).

Shepard must die.  Everything was leading to Shepard sacrificing himself. No matter how you played him/her, this was the choice he would have done.  Paragon Shep has always scarified himself for what he held dear, while renegade Shep would do anything to win.  In an epic like this I was glad I went out in a blaze of glory (or becoming the overlord of the Reapers).  Some people wanted Shep celebrating with his friends over a Bar B Q, and while that would be nice, no one needs a rest more than Shep, it was not where the story was going. I could not picture any ending that didn't involve his death.
The last shot of EDI and Joker was well done.  It resolved the central issue of organic vs synthetic in a concise way. Joker and EDI's relationship had been evolving since ME2 so it doesn't come out of nowhere.  EDI even wraps her arm around Joker spontaneously like a real girl in love would. This not only proved that organics and synthetics can get along, they can fall in love.  If you picked the synthesis ending then this feels even more poignant.

But thereAIs one main thing I DIDN'T like about it, and I think it is a key reason people are up in arms. Closure. Or lack there of.  Other than Joker and EDI and your LI we don't know anything about what happened (if Earth gets destroyed it is safe to assume everyone else dies right?).
I feel it didn't go far enough.   Show me that my sacrifice made the galaxy better in the long run, show me the fate of my teammates. I think a DLC epilogue consisting entirely of still shots would be very doable (and cheap).  No animations or voice acting involved, just pictures fading in and out during the credits. Of course if you could make a few new animation would be great too but I can understand that doing that post production is logistically difficult.

Things I like to see resolved in an epilogue:1) what happened to the people that came to help you but are now stranded on Earth?  Could we see everyone pitching in to rebuild Earth?  Like geth and Krogans on construction sites? Or Quarians salvaging and scanning Reaper corpse for anything useful?  Or Salarian and human doctors treating the wounded?  Something to let us know that our sacrifice and all our work to bring the galaxy together wasn't for naught?  There a lot of people assuming the worst case senerio were  the alliance breaks down and start killing eachother because BW didn't bother patching this up.

2) a better tomorrow: things without the mass relays will be tough, but show that the galactic races are on the right track. Show them working together, have a bunch of scientists of different races collaborating together.  Like Salarians and Krogans terraforming Mars.   I would love to see a bunch of lab coats surrounding what appears to be a blue eezo core with revolving rings (like in a mass relay). Hinting that Earth will one day start their own relay system with Earth at its center and make Earth the defacto galactic capital once that happens (hub of travel and home to all advanced races).

3) fate of the crew:  one of the reasons I liked what happened with Joker and EDI and my LI because I knew they survived and living in a paradise. But what about the rest of crew?
Garrus: I'd like to see him helping some old lady cross the street "regulations be damned". Maybe snuggling with Tali if Shep didn't romance her.

James:  getting a N7 armor presented to him by Hackett and some crew mates making funny faces at him in the background.

Tali:  acting as foreman for the construction of a space archology (a la Migrant Fleet style).  The construction is composed of geth and other races.   Not only has everyone realized the possibility of over crowding but are working together to solving it.

Jack:  stops a paper airplane in class with a barrier while scolding a student.  The student likes very scared and regretful.

Wrex and Eve:  if Eve didn't survive, Wrex is sitting in his throne and his soldiers standing by him at the ready. If Eve did survive they are surrounded by the crew of the Normandy and a bunch of Krogans while confetti is falling. Kind of like a wedding and more symbolic that krogan females will no longer be treated as loot.

Jacob:  holding his baby with his wife by his side.  Finally becoming the father he always wished his own father could be.

Miranda:  in a lab working on a petri dish labeled "Shepperd".
Liara:  continues as the an information broker but this time to keep up the lines of communication and news from around the galaxy. Cool thing about quantum entanglement is that is happens instantly no matter the distance. This seems to be the favored means of communication and should still work no matter what ending.

Grunt:  Working relentlessly at a factory while all his co worker look on in amazement.
Javick:  like to see him plowing a field or working in a lab. He lived a life of war and fear of extinction, he should be seen trying to live a quiet and meaningful life.

Samera:  looking longingly at a picture of her daughters. I don't think she will ever have a real happy ending.

Those are some suggestions but the gist of it is closure. Answer and tie up all loose ends so the players are not sitting around wondering what happened and not picking on plot holes and inconsistencies.  If this was done on release I think there would only be people complaining and not starting campaigns against it.  BW left too many holes hanging and players had to fill it in, often with more depressing fare which I honestly dont think was their intention.
