The miniquests I didn't quite mind, however I DID like the sidequests (Like Grissom's academy, Cerb scientists on the run, Rachni Planet) for the most part.
The fetch quests I assumed were equivalent to roaming planets for minerals in ME1 or Scanning planets in ME2. Except far less time consuming and painful.
Why Is Everyone So Forgiving Of The Eavesdropping Side Quests In ME3?

I didnt have a problem with this. I know its kinda creepy that Shep butts into other people's business, but in game mechanics, is quicker and smoother to activate and complete missions this way. So really, i forgive this for the sake of gameplay.

Never been a fan of side quest, so don't really do them...

It was really bad. No one mentions it because they just don't care. The truth is they're baahing.

Doesn't bother me in the slightest, I stand and listen to conversations for this exact reason.

The ending just overshadows everything else, I suppose, and its something that concerns the majority of players.
I really dislike the crappy Tali photo, for example. Reduced dialogs, lack of decent side quests is also a case.

I think they are more logical. Why should Shepard engage conversation with persons who apparently are wholly busy with themselves? Shepard is really not the person looking for additional work. So, for me it is fine then Shepard catches some snatches of information from conversations as he is passing by. If he finds something during his own business he might as well help out with what he found, then.

I didn't like these either. I hated them in DA2. They made the mining mechanic so horrible in ME3.

I like how these "sidequests" got depicted by angryJoe in his review

So many people say 'only the ending sucked'. What about how side missions were handled, reduced interactive dialogue with squad mates and tons of auto-dialogue.
Are these lost in the hysteria of the awful endings?
I can overlook things like that if the fix the endings.

The lack of sidequests (other than the Fetch-'n-Deliver quests) bothered me.
There were only a few N7 missions, and that's it. I expected more.

Mildly annoying, but overall not game-breaking or hindering. I'd sigh a bit every time I picked up another one, but really it didn't hurt my overall enjoyment of the game or my emotional involvement in the characters or storyline. Conversely, the ending destroyed my sense of personal involvement, and is much more troublesome.

Then why bother playing an RPG? Sidequests are what make the genre what it is. Otherwise, just go back to playing generic FPS games.

Actually, these gave some purpose to the ridiculous manual control of your ship on a map and the fuel resource, which I found a neat way to make the galaxy map more engaging than before.

Two problems and I agree with OP
1. There were far too many of these
2. They were useless fetch-quest with little consequence and immersion
Screams Laziness.

People are "forgiving" of it because the endings are a much bigger problem. If they were satisfactory, I would bet large sums of money that the journal and eavesdropping would be up there with the biggest complaints.

I do think it's odd that from 5 seconds of listening in Shepard knew exactly what to look for and pretty much where.

Didn't mind them at first, but i few too many, like the ones that actually changed to the "old skool" quest like the terrorist ones etc

Over all the side quests and quest log system in mass effect 3 were horable. i'm talking da2 levels of disconect here. Fedex quest for some randem asset to boost a number in the meta game that does nothing. Then its back to more shooty pew pew and quicktime events. Its ok first time round I guess, but replay value is hurt severly by some really odd (sloppy) design choices.

Mass Effect 3 had a lot of issues.
The bleeding ending is just the most notable, but others include:
Poor Side Quests
Day One DLC
Space Ninjas
Turning you choices into a faceless number on a meter.
