So after beating ME1 with a Soldier, if I start a New Game + with him, does that mean I have to beat it again before I can import it? I'm just done with Eden Prime a second time around but kinda wanna move to ME2. If I import now, what happens to my choices? Did I shoot myself in the foot and make it so I have to beat the game all over again?

Not really, you should be fine. Every time you complete the game a new saved game is created that you can import, but nothing's over written so you could import the character from your first game into ME2 right now even though you've begun a NG+ with it. But it'd be the character as it was at the end of that game and anything you do different in the NG+, like save someone you let die or romance someone different, will not carry through until you get all the way through the game and kill Sarenhusk/Sovereign again. If you're only up to Eden Prime on your second playthrough that's probably no big deal as none of that stuff will have happened yet. But if you do want to do anything different from what you did the fist time then you will need to replay the whole game to the end.

The main thing I wanted was to hit level 50 so I can have more xp/resources for the ME2 import. I wanted to double check as when I hit save, it was a new save under my old character's file. I just wanted to make sure there was a save file that I could still transfer to ME2 without having to do the whole game over.

I'm not quite sure what you're saying there. Let me put it like this, as I understand it if you finished the game with a character that's made Level 50 by, say, 1,000 points and then started the NG+ and added another 5,000 points you could only import your Shep into ME2 as Level 50 plus 1,000 points. Conversely if you finished the game as Level 49 and only 1,000 points short of Level 50 and then added another 5,000 points in a NG+ your import to ME2 would still be Level 49 and 1,000 points needed to level up.
I believe the saved games that are used in ME are not the same as the saves used to import. If you have a look in C:/Users/<your user name>/Documents/Bioware/Mass Effect/Save you should see a file named something like "John01_Autosave.MassEffectSave", which is pretty self explanatory. You'll also see a large number of files named something like "John01_XXX.MassEffectSave" with the XXX bit being a three digit number with the oldest being, unsurprisingly, 001 if you never deleted any saves. Both the autosave file and all these .MassEffectSave files are the ones used by Mass Effect.... and nothing else as far as I know. If you look further down you'll also see one or more files (depending on how often you've completed the game) named something like "Char_01-50-2-1-0-19-2-2012-82-58.MassEffectSave" and it's these files that ME2 looks for to import your character. That particular one is a Level 50 character from a game that I completed on the 19th of February this year, all of which you can see in the file name. The one I chose to import into ME2 (for story reasons rather than resource/money reasons - it's the same money and resources from Level 50 to Level 59) began "Char_01-59" and was at Level 59 when I beat SarenHusk/Sovereign.
In other words if you reached Level 50 in your first playthrough then you will get the appropriate amount of credits and resources when you import that character to ME2, but as far as I know if you did not hit Level 50 then you will need to complete game again to create another importable save. I may be mistaken but I don't think you can simply play just enough of a NG+ to level up a Level 49 character and then import from there. If the file in your Bioware/Mass Effect/Save folder begins "Char_01-49" then I think it means you'll need to replay the whole thing. The only other options are playing with the ME2 saved game editor, which I haven't done and know nothing about, or download a saved game from the internet that has a character or the right gender that made all the decisions you want and is the level you want them to be. Might be wrong on this but if you download a saved game I don't think you need to worry too much about Shepard's looks or class because you can change these at the beginning of ME2 after you import the game, so you just need to match things like love interest if any, whether you killed Wrex and Helena Blake, whether you let the Rachni queen and Rana Thanoptis go, whether you saved or shot the Feros colonists and so on.
