Does anyone know if I can stop the game from trying to auto-connect to the EA servers when I start up the game. There is a special button to do just that after all, and I would like to speed things up when I'm just playing singleplayer.

We respect the Offline Setting in Origin, so you can switch Origin to Offline Mode if you do not wish to connect to the EA servers in game. You will still do a quick connect attempt, but it should be slightly faster than leaving it on.
