Would you be fine with Shepard dying?

Personally, I think having Shepard die to save galactic civilization and stop the Reapers would've been a better way to have a "bittersweet" ending.
I think it worked well in Dragon Age:Origins with the Ultimate Sacrifice ending so I think if we had an ending that was otherwise happy with Shepard dying then that would be a good way to conclude it, especially since this is the last Mass Effect game with Commander Shepard.

In a game like Mass Effect, there shouldn't be any of, "Shepard has to ___"

my only issue was tyhe lack of closure for any of the characters weve learnt about over the past 5 years, any epilogue for them at all and the ending would be perfect

But I would not be satisfied. I dislike the idea that the hero has to die. It is a cliched anti-cliche.
Like in your DA:O example... I chose the Morrigan option every time.

My Shepard did die to save a galactic civilization and it's future by stopping the Reapers.

I wouldn´t mind him dying in every single ending. I wouldn´t also mind, for example, if Shepard´s survival required massive sacrifices and was accessible only above certain Renegade score, while the "save all" option would be open only to the self-sacrificing Paragons.
edit: to clarify, I do dislike the current ending, which is out of place, nonsensical, incomprehensible, short, and largely inconsequential. Also, everybody dies after the Relays explode. Also, I wish I could shoot the darn kid while telling him where he can stick those choices.

QFT but not opposed to the idea. As long as it's worth it. It has mean something. As it stands you don't save galactic civilization at the cost of Shepard's life; You DESTROY galactic civilization at the cost of Shepard's life, which is bull****.

However, I'm not opposed to the option of having endings where Shepard dies.

if this was a game like Final Fantasy which is a self contained defined protagonist then it would be okay.. . Mass Effect 3 is not that... it never was and to force at the end is completely because someone is playing ...yes and I mean ... playing at being an artist.
