Now there are 2 ways of doing this. Completely removing the PlotId flag numbers to -1. (Example - PlotId=122221 is now PlotId=-1). This will unlock every piece of armour in the game for you, however when the game is patched, this will probably be rewritten, so you will have to make the changes again. Plus there is the chance that you can make a mistake, which will screw it up, making the armor unavailable. Making a backup of your coalesced.bin is advised.
If you don't feel comfortable with modding the coalesced.bin file then write down the PlotId numbers. Then boot up your save editor, load a save, click on raw and then expand Plot. You want bool entries. Open this. Now search for the PlotId numbers (Don't worry if it takes a while to load all the PlotId's, especially if you have imported a save from ME1 & ME2 - there are allot of entries) The value of these PlotId will either be True or False. Set the Id's to true, and the armor will be unlocked. Save the changes to a save and then load it.

Yes, just open the fullbodyhelmetappearances and swap out the mesh for another piece of equipment. Gimme a few mins and I will post a screenshot of my modifications via editing the models for my shep.

As you can see, I replaced the helmet with the Kuwashi Visor model. You can also replace the models for the various bits or armor with the defender/inferno/dragon etc model as well, just make sure to delete the model for the arms, legs and shoulders and replace the chestpiece with the item set model of your choice, as the models for the individual pieces will clip into the full model of the unique armor.
Eg: (Mesh=(Male="",Female="") - this will stop the game from rendering the model for that specific piece of armor (arms, legs etc) .
To change for instance the serrice council chestpiece to the defender armor you need to swap (Mesh=(Male="BIOG_HMM_ARM_SHP_R.SHPc.HMM_ARM_SHPc_Slv_MDL",Female="BIOG_HMF_ARM_SHP_R.SHPc.HMF_ARM_SHPc_Slv_MDL")
to
(Mesh=(Male="BIOG_HMM_ARM_SHP_R.FBDa.HMM_ARM_FBDa_MDL",Female="BIOG_HMF_ARM_SHP_R.FBDa.HMF_ARM_FBDa_MDL")
NOTE: That you cannot change helmets into visors via model swapping, this is due to some code in the game itself, which I am yet to find as yet.
I hope this has helped some aspiring modders out there, however I haven't found how to swap weapon models out just yet (work in progress) as I want to swap the avenger and predator models used in cutscenes with the revenant and carnifex, as it kills emersion in my opinion to have shepard magically have a weapon she doesn't have equipped appear in her hand.

With the meshes, just use the tutorial I posted above, and change the models of the Inferno Armor with thoses of the Blood Dragon Armor.
Now, in terms of item stats, this can get a bit hairy. For the itemsets, you can only add the bonuses from other itemsets. You can't add individual effects like on the custom armor. To add the stats you need to find the

Eg:
(Mesh=(Male="BIOG_HMM_ARM_SHP_R.FBDe.HMM_ARM_FBDe_NH_MDL",Female="BIOG_HMF_ARM_SHP_R.FBDe.HMF_ARM_FBDe_NH_MDL"),GameEffects=("SFXGameContent.SFXGameEffect_UniqueArmor_Inferno,SFXGameContent.SFXGameEffect_UniqueArmor_BloodDragon"),Id=7,Name=352047,Description=352048,PlotFlag=20985,Type=CustomizableType_Torso)
You can add all the item set bonus if you wish, they will all stack. You cannot add all the bonuses to the individual part armor like the n7. The descriptions will update but the bonuses are restricted to 2 per piece. This is due to another line of code in the core game files that I have yet to find. But fear not, I will track the bugger down!

Nah its easier to do when its written out for you, besides I live in australia, and our internet is super lame, so even if I did a video, would probably take me around 2 hours just to upload it

Yeah that's my beef with it too. it makes me mad. It looks good with the N7 breather, but for some reason they only put the stupid open one on it. I dont see why the custom sets don have helmet toggles, its bloody annoying
