I'm sorry but if you can't distinguish femshep from a male soldier I'd say that's more a problem of your perspective what a woman is "supposed" to be like, I at least have no problem whatsoever distinguishing my femshep from my male one.
Why I prefer playing female characters in games like this? First of all, I like playing female characters, if it's an option in a game, I at least give it a try. One of the reason is that I like characters that challenge traditional gender models. That's the reason I loved Kaidan and especially Ashley in ME1, the "psiguy" with the pistol was the man and the heavy armor wearing grunt the woman? Sign me up. That's why I found Vega a bit boring in ME3 at first, he's just so very archetypical. They gave the character enough depth for me to come and care about him later on, but still.
That fact alone is almost enough reason for me to play female characters much more often than male ones, because, honestly, most main characters in computer games are written with traditionally "male" aspects in mind. They are the strong fighters, the leaders, the tough decision-makers, the prototypical "alpha males". I just enjoy having a female character in such a role much, much more than a male one because for me, personally, it's so much more interesting.
If there are characters that are identified by traditionally "female" characteristics, I'd be a lot more interested in trying to play a male version of those, but let's be honest, not too many of those roles find their way into video games because the way our society views typically "female" characters, they are usually found nowhere near the "front lines", and that's where the main character usually goes. If a character like Yeoman Chambers from ME2 would be playable, I'd be very interested in playing a male version of that. But as long as player characters are the ass-kickers and "alpha males" of the gaming world, so long female characters will be the majority of my gaming characters.
Of course, when I give a game a second or third playthrough, I'll try to make characters as different from each other as possible to get a different experience, so that's usually where the male character comes in.
