Any suggestions? I know there's not a lot to choose from, but I thought I'd ask.

Either max out health/shields or max out melee damage. Pretty simple.

That works, though, currently I only have the Krogan Soldier class.
During the demo, I wanted Turian for so long, never got it and got Krogan instead. Now that I have gotten to play Turian, I actually missed smashing things six feet away. XD

Well yeah. But what is the better option for Krogan overall?

For bronze? Just about anything can make you a tanky krogan melee machine. Silver? It becomes more difficult. Gold? Forget about it. No amount of 'tankyness' will save you, Krogan or no.

When I played the demo, my Krogan ripped through Cerberus like paper. I have a high enough level in my soldier now that I can pretty much pick whatever. I just want to get some ideas before I do.

You can try building a krogan sentinel along these lines:
Tech Armour 6 - (4) damage reduction (5) your choice (6) damage reduction
Lift Grenade 6 - (4) damage (5) grenade capacity (6) damage & radius
Krogan Berserker 6 - (4) weapon damage (5) your choice (6) weapon damage
Rage 6 - (4) health & shields (5) your choice (6) health & shields
I like to equip the Falcon (damage and capacity) and the Claymore (damage and shredder) with this setup. Even after the nerf, the Falcon is still incredibly useful for this build as it has a guaranteed chance to stagger and can spread cryo ammo over a decent area. The Claymore is my personal preference for when the big enemies come out as it can pump out some serious damage in close quarters, especially if you can use the reload trick. Slap on cryo ammo, a cyclonic modulator and a shotgun booster and you have a character that can act as a fire-support platform at long range and a heavy damage finisher at close range. It works very well on gold against Reapers and Cerberus but is substantially weaker against the Geth.

Fort: Durability, Power Synergy, Durability
Carnage: Damage, Incapacitate, Damage
Krogan Berserker: Damage & Capacity, Power Damage, Shotguns
Rage: Durability, Shield Recharge, Fitness Expert
This is the build I'm working on right now. I might go with more weapon damage instead of power damage because I feel like I'll be using the shotgun more. I'll still get the shotgun perk so I can reduce cool downs.

Build pure tank; the melee specs are redundant below gold and impractical at
Melee is mostly early wave only for gold

Sadly, Krogans aren't actually good at the tanking role. They don't draw the necessary attention nor can they take the continued punishment on Gold. They're less tanks and more just durable power weapon platforms.
Salarian Engineers or Human Vanguards fill the tank role far better.
In any case, I'd max out Carnage over Inferno Grenades, especially against Cerberus. Max everything at 6.
Not true. The actual tank classes (Salarian Engineer, Human Vanguard) tank very effectively on Gold.
Soldiers just don't have tank powers. A decent health/shield boost does not a tank role make.
