 Being that Mordin was one of the most acclaimed characters of ME2 and fan favourite, It seems to me that he was just written out of the cast because the voice actor (Michael Beattie) did sign on for ME3. I mean his death was handled perfectly and fit well into the narrative idears of sacrifice etc, but I can't help but think he would have played a much larger role in the early/original story arc

Nah, he just fine. He was vital to the genophage arc and the genophage was vital to his own story. He wasn't essential to the overall plot
