Frankly, Im a bit torn over whether or not i actually prefer her appearance/design in ME1 or in ME2

I liked her ME2 outfit more, it's a lot more fancy. And it didn't make her look so plain as a Quarian carbon-copy.

ME1's design was when the designers weren't predicting the huge upswell in the character's popularity. They thought fans would be put off by her off-humanoid figure.
ME2+ is a design change to rectify that in light of the unexpectedly large fanbase she garnered.

Canonically she changed suits in ME2 because she had completed her pilgrimage, allowing for fancier, more practical bits and pieces instead of just generic suit stuff.
That being said, the post-pilgrimage suit is fathoms better to me.

I agree. Her post-pilgrimage suit just looks better imo.
