Mine is actually pretty simple, the Paladin heavy pistol.
It packs a heck of a punch, and with a good scope mod is almost like a sniper rifle. And I like it because it makes me feel like a Wild West gunslinger or something, one-shotting most enemies with a pop to the head.

Revenent for Soldier Shep, the Tempest for all the others. What can I say, I'm a big fan of killing enemies by spraying lots of bullets in their general direction.

The Revenant and the Claymore are my two favorites. I do not actually use them because they have been treated rather poorly in this game with their huge weight and no real advantages to make up for it.

Paladin and Revenant for when I prefer to keep things simple. Sometimes the Phaeston, instead of the Revenant, it depends on what I feel like using. Mattock/Locust + either the Black Widow, Katana, or Evicerator depending on the misson.
I go with the Falcon, Particle Rifle, or Geth Plasma shotgun when feel like playing with something more... interesting. Much better than their Heavy Weapons counterparts in ME2 (the M-100 and the Collector Beam).

Vidicator is downright deadly as a Turian sentinel. I was trying to get a Revenant for more of a supporting role. Something that can lay down a storm of bullets into a group of enemies while more damage-oriented classes pick them off one by one. I gave up after my third Black Widow upgrade from Spectre packs. That's online though.
Single Player, the Scimitar with explosive rounds is a room sweeper. Combined with it's Light weight and it's a vangaurd's best friend.

I havent played all the classes yet but my favourite is probably the mattock although the Vindicator may actually be a more deadly gun.(sounds crap though lol)

The Phalanx Heavy Pistol, it looks great, got good damage, accuracy, and ammo capacity, unlike the Paladin or Carnifex which are sweet but the ammo capacity make them not practical to use as your main gun.

Particle Rifle, I thought ammo was the worst thing they changed in the "newer" mass effects, and this thing regenerates ammo.
Plus i feel like i am in a true sci-fi game when firing a giant "laser" beam at things

I tend to switch between various builds, but I tend to stick with the following with my Infiltrator:
Primary: Saber (scoped), Valiant, Raptor
Secondary: Eagle, Hurricane, Tempest

I've only played an engineer so far. I've been favoring the N7 Hurricane. I love the way it sounds and with AP ammo it tears folks up. I haven't played insanity yet so I don't know how well it will hold up...

Sentinel - Raptor - odd choice, till you look at it like an assault rifle - it has best damage/accuracy/fire rate of any assault rifle. And it scopes long range. 1 gun two uses, saves weight for powers.
Vanguard - Graal. Its da boom stick.
Back-up weapon: scorpion. The splash damage was surprisingly high. Great for those pesky eneies who refuse to poke their head out.

Sniper Rifle: Javelin - It's just a very good weapon, all the perks of the Widow, plus see cloaked/obscured enemies without scope mod. Versatile and powerful, if you don't mind reloading after every shot.

Geth Plasma Shotgun modded for increased accuracy. I played the last third of the campaign with this gun, and in no way did it fail me.

The black Widow moded with concentration and an extended barrel. Packs three shots straight from hell even on insanity.
