They almost certainly used whole body motion scan cgi in animating characters. The models wear full body leotards when scanning. The particular model used for EDI apparently wore nothing else underneath.

EDI has access to all of Joker's downloaded photos and videos, most of which is probably porn. She's interested in a relationship with him. As she's learning about human interaction, she probably thinks: "Jeff likes the way these girls look, so maybe I'll modify myself accordingly."

It's not that weird, really. Real women often adjust their looks to appeal more attractive to men. Why wouldn't EDI, who is arguably capable of even greater modification than a flesh-and-blood human, do the same?

And BioWare probably employs women already, anyways. People should be hired based on their skill, not their gender.
