Ok...I'm a complete n00b on this.    I've tried looking through the forums (all 900+ pages) to see if anyone else might have ask this, so if this has been asked before, I apologize in advance. 

I haven't finished ME2 yet, but would like to start ME3 to get a feel for the gameplay (aside from the demo) and maybe try some of the MP.  Can I create a new player in ME3 and play that, and then later when I finish ME2, still be able to bring that character over in a new game?

Yep, you will have to replay everything you have accomplished with the first file though.
