Question on romance progression.

I want to confirm, do the side missions have any affect on the romance options? I want to do all the possilbe sidemissions before each priority mission and before the priority mission decide on any available romance options.
Also, I know that certain romance options do not open up till after certain priority missions, but will they stay opened after that or do they have a set expiration?  I want to see if I can get to a single point where I can make all the possible romance options but I am starting to think that is going to be unlikely.

You confirm/deny romances at the dates on the citadel (IE: Ashley/Kaiden's meal, Liara's discussion about her mother, etc.)

I'm pretty sure the only way to miss on those opportunities are when you do a priority mission like Sur'kesh and Tuchanka. Not the side missions that go along with the priority missions.
Because I did all those side missions and went to the Citadel before I finished a priority mission. And I got all of the necessary romance dialogues for Kaidan and Miranda.

right now Im before starting priority rannoch. it appears I still have the options with liara, ashley, or cortez. Are these options going to be available until before starting the end mission or will they expire earlier? Also once locked in with a certain character will there be any new dialogues/scenes with them or is it just the end scene with them?

I can't answer your question about expiring, but I romanced Cortez and after his 'date' I didn't get any new scenes until the romance scene. Just some banter lines while talking to him in the shuttle bay, but at least one of them was mission specific so you might not want to put off romancing whoever you have planned for too long, just in case.
