I am not sure if Liara can die. I brought her with me when charging to that beam that goes to the Citadel, I thought she would have died, but I saw her in the final scene with her getting out of the Normandy, but I didn't see Garrus.

I think your LI and your most used non-LI squadmate step off the Normandy with Joker.
Squadmates who are with Shepard during that final charge apparently survive it, because characters you bring with you can show up in the crash landing cutscene if they were Shep's LI or used often. I had Liara and Javik with me when charging the beam, and they both showed up in the finale.
Originally the squadmates you brought with you were supposed to die, and had an actual cutscene depicting them being killed by the Reaper Dreadnought, but it was cut from the game.

She has no problem with killing husks, brutes, marauders and cannibals but as soon as you see a banshee she whines that it used to be a person, I wanted an interrupt to call her on that

2. Liara was a necessary part of the squad through most of the Mass Effect games because of her intelligence, knowledge of the Protheans and valuable resources when she becomes Shadow Broker.
3. She can die at the end.

The implication seems to be that there are more Ardat Yakshi than the monestary alone. The banshee on Tiptree
came from an ardat yakshi commando. (Listen to the PTSD sufferer explaining her relationship to the said commando. "We were friends, I wanted it to be more than just that but she had... a medical condition").
Judging by the messages inside the monestary, Ardat yakshi were only confined there when a justicar identified them as such, but the commando seems to suggest that there are quite a few hidden amongst the general population, many of whom, if not the majority, managing to maintain a fairly normal life unlike say Morinth

It isn't a plot hole.
As I explained earlier, the codex states that about 1% of Asari fall on the Ardat-Yakshi spectrum. So you have a similar percentage of people in Asari societies that are Ardat-Yakshi as there are autistics in human socieities. They are a minority but not unheard of, and considering the total population of the Asari across all worlds numbers at least in the tens of billions, and quite possibly hundreds of billions, you are talking about a very large pool of people who can be transformed into banshees.
On Thessia alone there is about 5 billion Asari IIRC. 1% of 5 billion is 50 million.
