I've been experimenting with Miss Zorah's build a bit, but so far, the results are not good.

According to her skill specialities, Tali is capable of deploying a Combat Drone and a Defense Drone.

Before resetting her skills, I experimented with her ability to do both at once.

It seems every time she deploys a Defense Drone, the Combat Drone goes "pop".

I think she had both active at once when we arrived, but given that I was incapable of prompting her to use both at once, I dismissed the experiment as a failure.

Therefore, when I reset her skills, I only gave her Combat Drone, to prevent the Defense Drone from "dismissing" it.

You can have both out at the same time just fine. Though I find the defense drone is really only worth having out when you're up against melee enemies like husks and brutes.
