I purchased all mission DLC for ME1 and 2, save for Pinnacle Station. I would happily do the same for ME3, but first there has to be an ending worth earning. Right now, doing so would be merely prolonging the walk off the end of the plank. I think the concern that the endings should be "balanced" is a valid one (I myself am a proponent of the "Refuse" ending), but more than anything I'd want the chance to reunite with the crew.
With that caveat out of the way...
I think it would be fascinating to see DLC for Shepard based on their psychological profile. Elysium. Akuze. Torfan.
War Hero: Your short leave at the colony of Elysium is interrupted by a massive combined assault by Batarian slavers and assorted pirates attempting to sack the city. Rally civilians and hold the line until reinforcements arrive. Move through street level on foot as an aerial battle plays out overhead. They could do anything with this, really.
Sole Survivor: Your unit falls into a Cerberus trap on Akuze. Kick back with Cpl. Toombs until the ground starts shaking and everything goes to hell. Attacked by multiple thresher maws, fight as long as you can, then run. Run like hell.
Ruthless: This one would be interesting. I question what really happened here - to me, Torfan sounded like the kind of military disaster that the Alliance would be happy to burn people over in order to save face. My own canon Shepard was a good guy with a "ruthless" background. After dropping from orbit, lead your squad as you infiltrate a massive underground slaver base and engage in vicious CQB. Capture and hold an enemy command center as wave after wave of enemies whittles down your squad. As communications break down, the rules of engagement are defined by you. Bear witness to the atrocities the slavers committed. Think of Talitha here - what they did to her, just what she was willing to admit. Perhaps those "murdered batarians" weren't quite so innocent after all...
