I wasn't particularly into her in the 1st game, but I love how she has changed and developed as a person over the three games, and I think that's what makes her endearing. She has arguably done the most for Shepard out of any character as well, and is one of the reasons Shepard is still alive: risking her life in the events before ME 2 to save his/her body.

Also, I don't personify myself as much as my Shepard as other people do.  I am more interested in playing a character who is thinks differently and makes different decisions than myself, because I get to be myself every day.  I like to try all the romances eventually because I love to see all the different perspectives.  IRL, the type of women I like are probably closest to Tali, but I find Liara's story very endearing as well.
