Bulls#!t. Liara goes through hell for Shepard when everyone else left him to rot. She tracks down his dead body, steals it from the Blue Suns before they can deliver it to the Collectors, then takes it to Miranda so the Lazarus Project can bring him back to life. If you question her on Ilium, she feels guilty about turning you over to Cerberus and admits that she did it all because she just couldn't stand to lose you.
As for not being a shallow one night stand, Liara makes you promise in LotSB that you'll always come back alive before continuing the relationship. They even talk about marriage, lots of little blue children, and old age. The gifts she gives Shepard and their conversations are also deep and thoughtful. For me, all of that pales in comparison to the thing that really tips the scale in her favor: as part of being an asari, she is the only love interest that can ever truly understand Shepard. With the burden on his shoulders, that is very important. They can become one with each other during the joining... sharing emotions, thoughts and memories. This is where the only thing I didn't like about the Tali romance (at least in ME2) comes in: the way Tali describes her feelings makes it sound like hero worship. Liara feels like she treats you as an equal. Also, sure, Tali is a nerd (tech expert)... but so is Liara (archaeologist).
Of course, it doesn't hurt that the sex is great either. Liara would have several things going for her in that regard. 1) Asari are some of the most (if not the most) powerful biotics. I imagine the two of them (my Shepard is also a strong biotic) could find some uses for that. 2) Asari can join their nervous systems together and are able to consciously control nerve stimulation. 3) Asari are just naturally comfortable and confident with expressing their sexuality. Contrary to rumors and wishful thinking, this does not mean that they are more promiscuous.

To expand a bit. This is my opinion only, and others are of course welcome to their own, but I'll try to explain as best I can.
I believe that Liara is the only perfect match for Shepard.
Tali's romance is too much of a case of hero worship. Tali can't ever see Shepard failing. Tali can't ever conceive or believe Shepard being wrong, or being weak. Liara can. Liara is always, always there, whenever Shepard wavers, and not only knows what is eating at Shepard, and why, but knows what to bring up and how to talk things around to get Shepard back in the game. Tali doesn't really think Shepard needs her. It's as though Shepard is gracing Tali with the romance, rather than a relationship of equals. As awesome as Tali is, she's just not right for Shepard.
Ashley is too guarded. Ashley can't just trust Shepard. While she would never have Tali's issue of seeing Shepard as someone above her, she still can't just take Shepard's word about what is going on. Shepard has to work way too hard for her trust. Relationships are built on trust, and Ashley just doesn't trust Shepard. Too much has happened, they've been broken apart too much, and Ashley just isn't able to rebuild what was lost.
Liara is perfect. She never questions Shepard's positions. She knows that, whatever happens, Shepard will always be Shepard, will always hold Shepard's views and morals true, no matter what (which is why the ending is a betrayal to her as well, as Shepard backs down from her own morals and accepts those of the enemy). She knows that if Shepard is working for Cerberus, it's for a dang good reason, one Shepard believes is absolutely necessary. Yet she also knows that Shepard is not infallible. She calls out Shepard for self-doubt, or for getting run down and depressed as things go to hell. And Shepard calls her out as well, for her own self-doubt, or the times when she gets too distant from the universe. The two anchor off each other. Each gives the other the eternal port in the storm. No matter where Shepard goes, Liara will always be there when Shepard needs her, and vice versa. Be that fighting through a fleet of Reapers, or just needing a hand off the floor of the cabin.
She's the only one who understands fully both Shepard, and the threat they face. She's the one who realizes the chance for failure, who plans against it, and plans to save as much as she can should everything fail. She also is the only one who understands that they need not weather this storm. That they can leave, fly away in peace, and let the galaxy die. But that they won't. That neither one would let that happen. That they are there, bearing the brunt of the storm, by choice. Liara and Shepard can both entertain the idea "why does the galaxy need me", but they both know the answer, without even having to vocalize it.
It is the only relationship with such a beautiful level of understanding. I'm probably not expressing it well, but I truly believe there have been few relationships written, especially in the gaming media, with this brilliant level of open emotion and understanding between the partners.
Someone later thought the underlined statement wasn't necessarily a good thing, but they misinterpreted what he was saying. He wasn't saying that she'll just go along with whatever Shepard wants because she's a doormat. He was saying that she doesn't need him to constantly explain his motivations or convince her that he's doing the right thing, because she knows who he is and how he thinks better than anyone else ever could.
The Geth/Quarian missions in 2 and 3 showed (to me) that Tali still doesn't trust Shepard to do the right thing even though he has proven himself countless times. Sure, she trusts him when it doesn't matter to her, but when it's personal her faith waivers. The Thessia mission showed how Liara understands the gravity of the situation and trusts that if Shepard is making a tough call, he has a damned good reason. She expresses how much it hurts to watch some of the things happen (like their air support getting shot down), but she knows as well as Shepard that it is absolutely necessary.
