I'll say right off the bat that I adore both ME3 and Skyrim. I had counted on Skyrim to help me kill some time until the release of the final chapter of my favourite series and it did its job all too well, sucking up 250 hours of my time. This rivalled (but did not surpass) my 8 playthroughs of ME2.
The question here is how does the long-awaited ME3 compare technically to the legendarily buggy Skyrim?
I'll start at the beginning. Like any player who logged enough hours on ESV:S, I was treated to a hillarious number of glitches, including:
--The weapons of fallen enemies floating slowly up into the sky
--A young villager apparently swimming through the air
--The headless body of a recently killed foe rising to attack me and forcing me to kill him two more times.
--An arrow getting stuck in my character's neck and remaining there for days (patched within a week or so of release).
And so on (and on and on). There were so many glitches in the game, I couldn't hope to recount them from memory. I hasten to add, however, that ONLY ONE of these threatened to be game-breaking: during my visit to a certain quest location, I had to reload repeatedly because an NPC who was needed to unlock a door was having trouble climbing stairs. My patience payed off however and in the end I was able to finish the quest.
In summary then, the Skyrim's many many bugs were mostly just distracting, and sometimes amusing.
Compare with ME3:
--Even before starting my game proper, I encountered the dreaded Face Import Bug. I had to reconstruct my Shep's face from scratch with mild to heavy immersion-breaking results.
--Over the course of the game, there was a lot of cutscene weirdness. At one point, jacob made a quip to Garrus only to have the camera cut to a blank wall. I think everyone experienced these kinds of bugs.
--During a cutscene with Miranda late in Act 2, my Shep's eyelids disappeared, giving him a grotesquely googly-eyed appearance. This happened again during what should have been an inspiring speech near the end. Distracting, but not game-breaking.
Of these, only the face import bug genuinely rankled, but not enough to destroy my enjoyment of the game. And then on Tuesday, I was surprised and dismayed to see that I had contracted the notorious Black Hole glitch, which completely locked up the game on my profile, making it impossible to progress past the loading screens without having my 360 crash. This, I will say unequivocally, is a game-breaker. Much more so in fact than the Isabelle friendship bug that made my second playthrough of DA2 unfinishable (this, of course, was patched, but not until long after I'd lost all interest in the game).
So there you have it, EA. You've turned out an installment of the most celebrated series of this generation which makes Skyrim look technically polished by comparison, at least in terms of the really serious glitches (Disclaimer: I can't vouch for the PS3 versions of either game as I played both on the 360).
I'm not sure how this happened, but I look forward to the fixes which will restore my respect for the game...hopefully before I've lost interest in it.

i wish ME3 had skyrim's bugs. imagine shepard being flung hundreds of feet in the air by an atlas! but unfortunately, most of ME3's bugs are game breaking or at least take you out of the moment

I don't think the giant whacking you into orbit was actually a glitch, but rather the physics engine converting excess damage into kinetic energy with amusing results. The closest thing I've seen to it in ME3 is a battle-raging krogan knocking geth across the map with a heavy meelee. Again, not a glitch, but so so awesome. Makes me wish I could play it right now, actually.
One funny MP glitch I experienced had my Krogan seemingly getting knocked out only to respawn in a completely different location.
