Movies:
Gladiator
3:10 to Yuma
True Grit
Pan's Labrynth

Games:
Call of Cthulu: Dark Corners of the Earth (A game based on the Lovecraft mythos leaves me with more hope for the world than ME3. Now that I think about it, that's pretty bad)

Deadly Premonition (AMAZING GAME.  YOU SHOULD TRY IT IT IS FANTASTIC) (Seriously.  I loved, I laughed, I cried. It's like if Twin Peaks was a video game.  Also, Special Agent Francis York Morgan is one of the best and most well-written protagonists I have ever seen.)

Metal Gear Solid 3

Loom (Ends on a cliffhanger and the fate of the world is uncertain, but the main arc has been wrapped up and we have a clear idea of what's next for the cast.)

Fallout 1

Rule of Rose (The ending is incredibly confusing, but it's completely in tone with the rest of the game and clears up what needs to be said while leaving the rest to mystery)

Silent Hill: Shattered Memories (Mediocre game, great ending sequence)

I think what's key here is that all the listed examples stay true to their themes, characters, and the rules of the settings.

I don't think I've heard many people complain about Final Fantasy VII's ending. That has a world destroyed sort of end too.

You know the whole point of playing as his son was to avenge his father's death?

*spoilers*

You get a secret stranger mission post-credits where you get to duel the old man who hunted John and kill him

I know.

A game isn't over until the credits rolls anyway. I meant instead of continuing on after I killed the old man I would restart and enjoy the story again.

Twin Peaks.

The ending still makes me very very upset, though. I don't like the hero being turned into the villain (something I think ME3 narrowly avoids).

The Hunger Games - Both the first book, and the trilogy as a whole.

See, I never saw it that way. Maybe Hunger Games, a bit bittersweet... but Mockingjay? Not a chance. It doesn't go for bittersweet and fail; it goes right for bitter with intent. Somewhere near the end of Catching Fire, the story shifts from a young girl over-coming adversity and hardship, coming out scars and all while still having something to fight for... to a very methodical "how-to" on how to psychologically break a teenage girl.

And I loved it. It actually made me cry for a good few hours at just how bitter it was. Very poignant.

For bittersweet, I'd put up The Clone Republic as a series. Over the course of seven or so novels, you see a bright-eyed rookie gradually lose himself to his genetic predisposition to violence, starting as a noble patriot and ending as an apathetic freedom-fighter who is just searching for reasons to fight. He loses all but one of his friends through the series, gives up the love of his life to avoid dragging her down with him, and manages to end a galactic civil war through minimal attrition, leaving him stranded on Earth, the very planet that hates him to the point of wiping out the rest of his kind. But even in that peace, he's left with nothing new to fight for. Maybe less bittersweet and more serene with stir-crazy around the edges. Still fantastic.

That's how you do bittersweet.

I vote Joss Whedon for the new ME3 ending. Lol.

Edit: Though, I never got why they killed off Wash randomly like that. I thought maybe because Alan Tudyk wanted to go into directing, instead...

3. Metal Gear Solid 4

If snake would have killed himself, the ending wouldn't be just bittersweet, but perfect,  it would have given closure to a so tortured character, hinestly snake it's the only character that i've seen that really deserves to die, it's just cruel to see him like in that physical and mental condition the entire game. But still, very intensive epilogue.

Honestly he was the scariest choice. He is almost never in a combat scenario, you always expect him to be one of the last one standing. There was no warning it just suddenly happened and there is lots of jaws on the floor with O.O eyes.

Pulling straight from films:

3:10 to Yuma (Film) GREAT ending & an all around great film (Not a lot of great Western flicks these days)
Gran Turino
Saving Private Ryan always gets brought up, it's a bit cheesy
Gladiator is another one

Book/film
Lord of the Rings: The entire series. Heck most of Tolkien's Middle Earth mythology could be classified as bittersweet.

The 'leaked' Mass Effect ending would've been boss & would qualify as a great bittersweet ending imo. I definitely would've been satisfied with the overall plot points.

Half-Life2 Episode 2 pretty much nailed bittersweet. Honorable mention for the original Get Carter and believe or not, the directors cut of Troy.

2 )Braveheart
3) Tombstone
4) Unforgiven
5) The Last of the Mohicans (book or movie) One of my favs.

(Edit:) this thread just made me think about the oh so many books, movies and games that do have fitting endings.
AAAHHH!!!

Best part of Halo 3 was while the Chief was lost in space he wasn't dead. It's much easier to pick up from lost in space as opposed to all races, people, and technology obliterated.

Movies:

Pan's Labyrinth (Amazing film!)
Sunshine
Letters from Iwo Jima (though I'm not sure that counts so much, cause its based on a historical occurence)

Games:
Lots of good examples already been brought up but: Dreamfall: The Longest Journey anyone? OK its almost completely bitter with very little sweet, but manages to be really beautiful at the same time :) .

These too (though I feel none of them would be the same without the music!)

Though I think Requiem for a Dream doesn't count as bittersweet...

Just REALLY REALLY bitter (I'm NEVER watching that film again, it was really good, but my gosh...)

Loved the others though!

Halo Reach. Noble 6 dies. But in doing so, you manage to let the Pillar of Autumn escape, therefore ensuring the Master Chief can save the galaxy 3 times in as many games. There is the sweet part of bittersweet, you see the ship you saved fly off into the sunset. We already know what happened next, so no slideshow epilogue is necessary to wrap up the plot. Six just goes down fighting but having already secured future victory.

Oh boy let's see. If we're just going off of video games, Halo 3's was very well done with the symbolism of Chief's journey coming full circle with the stasis pod, Halo Reach with the post-credits scene where no matter how hard you fight, you know you're going to die. Bioshock 1's final levels were very poignant for me as you watch Rapture essentially falling apart (now if only I didn't have to escort a little sister while that was happening). Bioshock 2 also had a very sad ending if you went with the neutral path. Also Red Dead Redemption and GTA IV.

As for movies, I'd go with The Iron Giant, Fail Safe, The Dark Knight, The Descendants, True Grit, The Social Network, Moneyball, Up in the Air, District 9, The Curious Case of Benjamin Button, Michael Clayton, Atonement, Million Dollar Baby, Lost in Translation, Saving Private Ryan, Braveheart, Casablanca, Gone with the Wind, and To Kill a Mockingbird to name a few.
