It's impossible to select conversation options with out the mouse going haywire, and I try to move Shepard around after the first few opening cutscenes it's IMPOSSIBLE to move....
Move my mouse a mm to the left and Shepard does like 8 360s and I'm starting into the sky...
Holy Crap how do I play this?

Try turning down the master mouse sensitivity in the Razor Software. Your preferred sensitivity may vary, but I have mine set between 4 and 5, and I have acceleration set to like 1.5.

I use a Razer Naga and don't have any issues. But I have had the same issue on Borderlands. It always comes down to having another type of controller plugged in. In my case it is a Saitek Joystick. If you have any other mice, Wacom tablets, joysticks, etc., unplug them while ME3 is not running and then restart. I'd even go so far as to unplug cameras and printers. Anything that is unecessary to play the game and then try it. I would imagine that the game is getting some conflicting signals from somewhere. Good luck.
