Can I switch back and forth between PWs?

The ones that I am looking at have an auto downloader and the one server I did join didn't install and overrides into the override folder that i can see.

There can be issues with using the exact same hak, which means you redownload the correct version for each pw, but that is rare and mostly happening on the social servers ( adult rated stuff ).
You should completely quit the game between PW's, technically not everything will unload which can cause problems.
You also can set up short cuts and give each PW their own player folder which won't conflict either, or just use that so you can install things to your override in SP playing. ( -home parameter added to the command line specifying the folder you play in - you do this in a short cut )
You should use the client extension by skywing as well. It fixes a lot of issues, crashing, speeds up area loading, and works with the bugfix code skywing has installed on every PW at this point.

I have looked at the client extension thing and whil i am pretty computer literate, it seemed difficult to use.
How would I go about setting up a shortcut for each PW?
The two that I am looking at currently are the middle earth one and dalelands beyond or beldin nights.

You just download the provided folder and run the file like you would the regular game, and it does the rest. Generally you have to adjust things so it's full screen and close the other 2 windows.
You make a shortcut of the game like you normally would and put it on your desktop. Then modify shortcut, then put in "-home c:\\nwn2playing\\" - then it creates a folder the next time you play on the root of your drive. ( you can put it anywhere but you have to quote anything which includes spaces, its a lot easier to just put it on the root of your drive )
original instructions
1. Use the toolset normally, but create a special shortcut to nwn2main.exe with the parameter "-home C:\\NWN2\\PWFiles" or something other location of your choosing. When you want to log into your PW, use this new shortcut instead of running normally -- this will make sure that any files added/removed by the downloader can't affect the files you have in place for your modding.
You may also want to copy "nwn2player.ini" from My Documents\\Neverwinter Nights 2 to this new location, so that your preferences are retained.
