PART 1:
I'm already gay so..
James - for the heck of it. Only a full 'romance' if the Indoc Theory is true, showing that he's more attentive to his surroundings than he lets on. Yeah, I don't want a complete meathead.
Kaiden - hey, he's sweet. I know the VS is written in ways to always get them down/show them as stupid, but as characters themselves, I like them. Kaiden is also likely more of a 'lover', which is better.
Joker - Not as a full romance, but a fling and some fun sure. He doesn't look so good in ME3 for some reason though.
Steeeeveeee - ...Kinda. I mean, he's the one most alike to my current boyfriend (Um, whatever pre-Collector attack Steve was), so I'd rather safely have crushes on other ones for the sake imagination. Though my boyfriend is both a Cortez/Kaiden in different ways. Steve's alright, but in the game, I totally just accidentally kissed him while dancing, getting the Paramore achive, swearing, and had to redo my whole trip to the Citadel in order to retrace my steps to romance Kaiden. Um, I guess that says a bit about me
And that's it. Maybe a few random NPCs that look interesting too. No aliens - I can't find any hypothetically attractive enough to do anything. The 1% of me that is especially deviant, does think of Garrus and even Wrex though, but yeah, that's 1% rofl

Not Liara, just friends. Not Tali, though besties. Not Jack or Miranda, neither are even attractive to me. If they modelled Miranda more off of her voice actor and maybe kept her as a blonde though...
Not Samara, but I like whenever she appears. Not Kelly..she's weird.

I guess I'd go with Kaidan. I felt really awkward for turning him down anyway. It just felt like it was much more important to him than for anyone else, including the females.
Second one would be Cortez. Great guy who takes his chances and doesn't give a damn when he's turned down, talk about awesomeness. Although I would have problems with his dead husband. Would make me feel like I'm the second choice.
