Liara all the way. Always had a thing for her right from my very first Shepard.

Was rather fulfilling, although vanilla ME2 was a bit of a low point for her 'mance (LotSB fixed that though).

I feel that us Jack romancers got completely screwed in ME3. Basically two scenes with Jack. No romance scene, no nothing.

That's my exact list too. And yeah, we totally got shafted in ME3 with Jack.

ME1: None (wasn't too in to the characters at the time, didn't know there were any love interrests)

ME2: Miranda or stay with Ash (haven't made up my mind yet)

Not always, but my preferred playthrough LI build:

ME1: Ashley (dies on Virmire)
ME2: Tali
ME3: Tali

You may wonder "why romance Ashley if she dies on Virmire?" Adds tragedy to the first game, ofc. Shepard actually loses something and gets a personal reason to stand up to the Reapers in the first game, then falls for the person who stood by his side.

ME1: Kaidan...achievement purposes only as I found him as dull as dishwater. Every other play through after that I kept Ash alive or just didn't bother with anyone.
ME2: Thane, it was always Thane. Couldn't stay out of Life Support.
ME3: Thane and while it mattered to me, it apparently didn't matter to BW as it didn't count for crap. My Shep did not move on and will not. His romance was botched and butchered and forgotten about just as poor Jacob's was. I guess I didn't get rewarded in my game, I got punished for not choosing who they thought was the right choices. Even if my FemShep was so cold as to want to move on immediately, who would she choose? No one, I fixed that lingering Virmire guilt by shooting Kaidan. I've always regretted not having the choice to leave them both there and take Kirrahe instead.

My main Shepard romanced Liara in all three games, I have alternates with Miranda and Jack but for me Liara was the real deal.

ME1: Kaidan
ME2: No one. Horizon was emotionally jarring. I was expected to be reunited, and then I was crushed. I was really upset, but then I thought it was a great story development for my Shepard. She didn't romance anyone else because she didn't want the emotional attachment, and she wasn't over it. Garrus and Thane were tempting, but I was just flirting, and didn't go further. Jacob never struck me as truly interested in Shepard, so I never considered him seriously. Then I found out that I could be reunited with Kaidan in ME3.
ME3: Reunited with Kaidan. It was just meant to be.

Liara. It's odd, really, there are some touching moments in LoTSB and ME3 with her, but it's the Liara in ME1 who I always remember.

Have one playthrough with Garrus and one with Tali, just to see how they go and esp. since I keep hearing such great things about Garrus in ME3. Having a hard time making myself do another ME3 playthrough though.

Liara was boring though, you could treat her like crap, and she would still jump on the chance to bone you.

I tried romancing someone other than Kaidan once. Hated it. So I deleted the character and rerolled.

ME2&3: Stayed loyal to Liara, but didn't get down to it. Every time we got close and she said "there's so much work to do", I'd choose the "you're right" reply. I actually really enjoyed playing through the "one-time lovers who never quite re-kindled their feelings" story. Then Liara's final gift of the scene in the stars, where she rested her head on my shoulders, was the loveliest thing ever.
I have to go now, I think I've got something in my eye...
