I can't decide between those last two. Legion is awesome but Liara gives this group more than one female and she's way too relevant to the plot to just leave out.

Kaidan: I've always loved him.
Thane: One of my faves from 2.
Samara: Same as above.
Miranda: Same as above.
Liara: I love her. So much.
Mordin: One of the series' best characters, and a good friend.
Garrus or EDI: Both great, can't really decide.

Well if I had to only pick seven, for me it would be....
Miranda: She is one of my favorite characters honestly. I liked her coming around while still remaining who she was. She also had the most useful powerset. I just liked her. (And as long as we are in dreamland can she be bi so I can romance her?)
Garrus: After Mass Effect 2 did such a good job of developing him...he needs to be around period.
Tali: Same with Garrus I like keeping the motif that they have stuck with you through thick and thin.
Grunt: Grunt has kind of grown on me over time, especially his mission in ME3. I feel he had places to go as a squadmate, that Wrex could not. Wrex, and Liara, both feel more at home in their out of squad positions, while Grunt could have stepped up to keep growing, maybe setting him up as a potential Wrex 2.0 (In terms of combining brains and brawn like Wrex)
Zaeed: Everyone's favorite rear end in a top hat returns with Jessie fixed and ready for Reaper blood. He was the only one who made it out alive.
Kaidan: I feel he has more potential to be awesome than Ash, even if he is Carth.
Legion: Unique and interesting character

Honorable mentions:
Vega: I actually liked Vega and wouldn't mind having him around, but if I can only have seven old mates get priority.
On that same level I would have loved to see like a human female vanguard in that same kinda space marine role. Basically a badass fellow marine who isn't whining at you half the game...

And yeah like I said I feel Wrex and Liara have more important things to do than tool around with you and shoot dudes. Also I really hate Liara. Like really hate her.

Realistically speaking. This, was my DreamSquad for ME3.

Garrus - Need my TurianBrother. Overload. Sniper.
Jack - Need my AllPowerfulBiotic. Funny Quips. Shockwave. Warp Ammo.
Grunt - Need my KroganTank. Fortification. Up Close and Personal.
Javik - Need my AncientGrandpa. Lift Grenade. Dark Channel.
Liara - Need my BookishNerdBroker. Singularity. Warp.
Miranda - Need my CheerLeader. Warp and Overload in One Place.
Kaidan/Ashley - Need my Nostalgia.

Temporary Squadmembers... Tali, Kasumi, Samara, Legion, Zaeed. For a mission or two.

Unrealistically speaking. If Thane wasn't terminally ill I would trade him for Kaidan/Ashley and have Kaidan/Ashley as temporaries. I would also love Mordin if he wasn't busy with the Genophage Cure and if I felt I had a character to trade him with...

I hate that my DreamSquad could easily have been in the finished game...

Garrus- wanted a turian in my squad since the moment i saw nihlus in ME1, one of the best written characters in ME3
Legion- geth are awesome
Tali- Bad in ME1, took a level in awsomness for ME2 and ME3
Liara- Bad in ME1 and ME2, great in Lair of the Shadowbroker and ME3
Mordin- need someone hyperactive, plus a big dammned hero
Grunt- need my krogan 1 year old
Either Jack or Javik or Aria
