Too wasy now. Can just buy my way to victory, and even though the notes say nothing about it I feel as if the enemies are easier to kill even on nightmare difficulty...
Well, what I want is to keep the bug fixes and other beneficial patch content but I want the money and potion drops and the health/damage of the enemies to be as they were before the patch. I'm willing to remove any and all patches if it is the only way, but how can I do this? If I buy a boxed copy of DAO now would it be the unpatched version? Would it be hard to find?
The difficulty was just right before the patches...

limit your spending? Limit how much you carry? Police yourself if that is your only gripe.

What if I delete the Dragon Age folder under my documents? The one with all of the saves, settings, DLC and so on. Would that revert my game to the pre-patched state?

Simplest method is to just uninstall and reinstall the game, I guess. But if you're on PC, head over to the Dragon Age Nexus and browse for some difficulty mods, first.
