 I know this can be done with Mass Effect 2, but does anybody know if there's a way to move Xbox 360 ME1 saves on to the PC, and be able to use them on the PC version of ME1?

I'm not too sure, but you may be able to extract your Xbox save with Modio. It's been used a lot lately for people who haven't been able to import their ME1>ME2>ME3 faces. I'm thinking I saw something in there that allowed you to convert xbsav to pcsav... again, not so sure about this.

I see, thanks for the info. I'll look around more to see if there's a way to convert the ME1 saves.
