The ones on bodies after fights, just from the videos...something doesn't look "right" about them. I think it's too uniform and also there are no actual wounds to go with the spatter.

I think it can be slightly excessive at times. Was watching a video of person killing rats and in the following cutscene he was soaked in blood.

Archangel, the splatter isn't from your wounds it's supposed to be from where you've been hacking other people/creatures to death, tends to get a bit messy when your hacking someone/thing up.
Although to make it realistic the characters should really be soaked in blood.
