 I'm a guy and I played through ME3 as FemShep so I could romance Garrus.

That said, gender does not affect the immersion in my case.

I am a male and I play as both, though a bit more often as a male Shepard. Female Shepards have romanced Kaidan, Thane and Garrus, males have romanced Liara, Ashley, Jack and Miranda. The Kaidan/Garrus and Ashley/Jack ones are my "main" Shepards, I guess you could say.

Male, played as male 4 out of 5 times in ME1, all 4 times to completion in ME2, both times in ME3. My "real" male Shep has always been all-Paragon, do everything and do it right, and always smitten with Tali. Other games are generally just quickly-played, imperfect alt-universe curiosities, though I am doing an ME2 run with a Renegade shep I blasted quickly through ME1 with (no LI even) way back when and who now quite digs Jack.

Primary full series playthrough: Male/Paragon/Tali
  -- alt: Male/Ren/Ash loyal

Awaiting import if I care to do so: Male/mixed-Par/Liara loyal, Male/mixed-Ren/Jack (current playing in ME2)

Tried to play a femshep once back in ME1 for Jennifer Hale's voice acting but I just could not get into the character, I also always play more or less paragon and romance Liara

first playthrough was male shep *only* because femshep can't romance Tali.

Headcanon and any future fan-fics are strictly Fem Shep.

Though, I'm still immersed when playing my "alternate canon" femshep. Romanced Liara in ME1, got with Garrus in ME2, then rekindled the romance with Garrus in ME3.

...Then I broke down since rejecting Liara was like kicking a puppy, so I created another male Shepard just to romance her...

stayed single in me1/2 and romanced steve in 3
