A couple things:

Firstly, is there a way to create multiclass combinations that aren't on the normal list?  I'm specifically interested in doing Kensai/Ranger/Sorcerer if possible.  Currently I'm settling with Kensai/Mage, that's about as close as I've gotten thanks to Shadowkeeper.

Second, is there a list of the npc only races/classes and their progression anywhere?

Third, any recommended mods/tools?  I'm currently using only BGT, Shadowkeeper, and the Picky Familiars mods, though I'm thinking of incorperating more.

It's not possible to create combinations whose base class is not available in the game, but it is possible to use a mixture of kits not available in the game.  Thus you are able to be a kensai/mage multi-class (fighter/mage base class), but could not be a fighter/sorceror.

There are quite a few lists out there - try googling baldur npcs and find one you like.

BGT is designed to be used with the BG2 Fixpack already installed, so I would suggest you put that in.
BG1NPC project adds the sort of interactions between NPCs that are standard in BG2.
BG1 Unfinished Business / Unfinished Business for BG2 add back in originally designed content that was cut during the development of the original game.
Widescreen mod lets you use higher resolutions.
Worldmap mod gives you a nicer looking map to plan your journeys.
There are lots of others that give the opportunity to tweak the game.  SCS / SCS2 are well written mods.  BG2 Tweaks and BGT Tweaks allow you to customise quite a few things.

Hmm I'll look into that then. Any chance you could link me to places some of these mods are at? I have the infinity engine modlist bookmarked but since everyone uses abbreviations and such anymore half the time I'm not sure what people are talking about or where they'd be located under if they're on the modlist. The only abbreviation I know is Baldur's Gate Trilogy right now ^^; Sorry for being such a n00b at this stuff, I''ve been out of the game for about 7 or 8 years >.<

You can find any of the mods above by googling the titles I've given. Alternatively here is a site that provides links to BGT mods - though there are so many of these that you may find it easier to just google the ones above separately.
http://kerzenburg.ba....eu/bwpmods.php

By the way the first pinned thread in this discussion group gives a list of BG abbreviations which you might find helpful.

Is there any specific order I should put things in? ie, can I just throw them in as is or do I need a clean install?

Yes, order is often important and you should certainly start with a clean install before adding in mods. The site I gave the link to before has mods listed in their recommended installation order so you could follow that. It would also be sensible to read the readme files for each mod to see what they say about installation order and any potential conflicts with other mods.

Joy, well, I don't have the discs anymore (they were a loner from my dad) and I already have the BGT mod and the picky familiar mods installed. Worse comes to worst if I have to do others before BGT I'll get the discs again but it'll be a while.

A useful tip is that, once you have a fully patched original installation, to take a copy of that. If you later want to change mods or have to reinstall for some other reason you can just copy it back to your installation directory rather than starting again from the disks. If you want you might also take copies of the installation at other stages, e.g. at the point where you have just installed BGT.

Yeah, just didn't plan ahead. I shoulda made copies of the discs or something at the very least, there was a problem with my first install too so I had to borrow them back anyway before. No worries though I can just keep to what I have if need be.

EDIT: I'm going to find a way to start with a clean install soon, so in the meantime let's discuss possible mods.

I noticed the Drizzt mod was mentioned a few times, is it any good?

I see alot of kit mods, any of them any good?  I like having more options for character development (I played particularlt BG1 to death years back, so I find it hard to play through with the standard choices anymore).

I will likely stick to BGT, but are there any others I should consider?

Assuming based on the readme for BGT and some of the other things I've seen I should install BGT last if I'm planning on modding BG1 at all, and last for other major mods correct?

Any other mods that increase the items, quests, and npc choices I should consider?

I personally doubt I'll use the difficulty increasing mod mentioned above, but I'll definitely take a look at it.

Preferably in mods I'd want things that don't replace currently existing options.  If possible I'd like to leave the original game as untouched as I can (excluding of course something like BGT combining everything).

I'm going through everything I can find here>
http://modlist.pocketplane.net/  on the Infinity Engine Modlist, slowly checking out what's up there to see if there's anything I'd like.

So far the mods I'm leaning towards definitely including are as follows:
BGT
Picky Familiars
Drizzt's Saga
BGFixpack
BG1NPC
UB1/UB2
BGTweaks
Widescreen Mod
Worldmap Mod

Looking into:
BWP
SCS/SCS2
TotGD
DSotSC
FFT
NFotSC
ToBEx

Let me know if anything might conflict with eachother, what orders I should put them in, and whether there are better alternatives.  Once I find out what various megamods include I might drop things or revise accordingly.  I will update this list whenever I find something that I might like, or I recieve intel for or against anything listed or not.

From your list I've commented on the ones I know (and listed them in installation order).

ToBEx - a cut-down version of this will automatically be installed with SCS, but you may well want to install the whole mod (which then overrides the SCS version) if you want the additional options this offers to tweak the game.

BG2Fixpack - fixes lots of little bugs and a requirement to make BGT work properly.

BGT - makes BG1 work with BG2 game engine (so you have access to all the BG2 kits etc).

DSotSC / NTotSC - introduces quite a bit of extra content into BG1. The quality of this is not as good as the original game and some of the items you get are overpowered. Probably not worth it unless you are already bored with all the other content you have.

Drizzt Saga - not a bad mod, but vastly overpowered for BG1. If you do play it and want to use your own characters, I suggest you do it after completing everything else in BG1 (you will probably be around level 10/11 then) when you will be able to make at least a marginal contribution to help Drizzt. As an alternative you can just use Drizzt's friends to play it through.

BG1NPC Project - very good mod that provides more NPC interaction in BG1.

UB1 - a good mod that restores content deleted from BG1 during original game development process.

UB2 - a good mod that restores content deleted from BG2 during original game development process.

SCS - very good mod. Although the core intention is to increase difficulty it's fully modular and you are able to install only components that make things easier if you want.

SCS2 - very good mod. Although the core intention is to increase difficulty it's fully modular and you are able to install only components that make things easier if you want.

BGTTweaks - a good mod that provides some options for changing the way the game works.

Worldmap Mod - improves the look of the map used for travelling between areas (also offers the alternative of changing travel times and destinations available, which will change gameplay a bit).

Widescreen Mod - handy to allow you to take advantage of the greater resolution offered by modern monitors.

Mods I don't know:
BWP - not so much a mod in itself, but a way of combining other mods as part of a single installation process
TotGD
FFT
Picky Familiars

Picky Familiars I found on the infinity engine modlist, all it really does is allow you to choose your familiar when you cast Find Familiar. It presents the eight possible choices and halts the spellcasting until you choose one, resuming it once you choose and changing your alignment to match the familiar for a split second. Nice and helpful for those who say want to be good but want an Imp familiar or something.

I've played with it a bit and it seems to be working just fine, I installed it after BGT and no bugs so far.
