I think what we end up seeing with the majority of "attractive" Sheps (male or female), Mort, is a combination of in grained examples of attractiveness in our cultures in addition to our innate mental capacity to recognize healthy genetics and other growth factors by facial features.
Those two factors push players, unconsciously, into creating what researchers have called an "average face" thus we get left with this homogenized appearance for user Sheps. I've read several articles and watched shows about this phenomenon (meaning the science of faces, perception, recognition etc). It's all very fascinating. I think the BBC has a love affair with the concept, I've seen several specials produced by them.
However this isn't to say I haven't seen some more individual Sheps (male or female). My BroShep looks reminiscent of the actor Faran Tahir (you may know him as Captain Robau in 2009's Star Trek, a villain in Iron Man or perhaps the show Warehouse 13). Whereas the majority of BroSheps I have seen look like some hair color and style variation on a G.I.Joe Duke action figure.
