Which is more functional or fun to play?
I'd probably go Templar with the Warrior and Ranger with the Rogue if that makes a difference.

I am curious about this as well, except I was thinking champion for the debuff/buff when I am in the thick of things. I like the first Warrior skill since I eventually want more than light armor and it would help with fatigue, they also have better base fatigue and health. Rogues get the nice every 10sec crit and threat clear from sneak though.

It's too bad that warrior archers lack a good specialization imo. Especially if you play as the dalish. Templar really makes no sense then and the other specializations all seem melee-centric. None of them makes me think they were made with archers in mind.

I'd say rogues. The ranger spec is quite nice. Plus, as DLigue said, stealth is an awesome bonus. If you're lucky you can even 1 shot some pretty nasty baddies.
Warriors get to wear heavier gear, but this shouldn't be an issue as long as you've got a proper tank w/ taunt and threaten.

I never even thought of using Stealth with Archery. -Shows what I know. 
I assume you simply hit the Stealth button, shoot someone from far away and get an automatic critical, yes?

Yes and with combat stealth you can keep doing this during long fights.
