I know it was in Mass Effect 3, and I can't remember exactly what was said. So what was the reapers intention exactly? From what I gathered, it was kill certain races and leave others unharmed. Why?

The reapers were the solution to chaos.
Apparently synthetics always rebel and kill everything. The Reapers prevent all life being wiped out by harvesting the ones most capable of creating a terminator apocalypse.
Synthetics harvesting organics, so that organics aren't killed by synthetics.

Think of it as a galactic life cycle. In a life cycle, living things grow old and die, making room for the next generation of the species. In this way, a species grows and adapts. If a species were immortal, they would in essence stagnate.
The reapers basically enforce this on a galactic civilization scale. If advanced civilizations grow and expand to the ends of the galaxy and then stagnate, like their "original" civilization did.
So the "solution" was to create a sort of lifecycle for civilizations. By culling the advanced races periodically, it made way for new life to advance. The reapers decided that the best point to do this was just before the inevitable technological singularity point where intelligent AI was created. This AI stage was the "end of life" stage for civilizations as the synthetics inevitably turned on their creators wiping them all out.
