This has to do with the options about how the game can end. I'm really
enjoying this game so far and I'm sort of toggling between two
different outcomes with the same character, one of which so I can have
an ending concerning Zevran so I don't really care what happens to
Alistair on that one and the other with Alistair. On the one with
Alistair, I don't exactly want him sleeping with Morrigan if he's going
to be with me xP, but then I don't want to have to sacrfice either one
of us and I notice that third grey warden sort of does something stupid
and gets himself killed early on in the battle. Sooooo, my question is,

Seriously?? I tried that once accepting her to sleep with Alister and I refused to watch it. 'that wasn't for the one I want ending with Alister either. xP 'and if you refuse her ofter she turns into a b***** and leaves the party, which sucks because she's my most powerful ally, my hero is stronger though but still with her my group is nearly invincible.

Or you can spare Loghain and allow him to kill the archdemon in the end, thus saving both yourself and Alistair AND not having to sleep with Morrigan.

But then Alistair forcibly becomes king and he rejects our relationship, so you're saying there's a way to convince Alistair to accept the relationship again and still have Loghain as a warden?

From what I've seen, no, you can't have Alistair if you spared Loghain. I've read it from this forum, but I can't remember where I've found it before.

As others have said, there's no way around the ritual unless you or Alistair dies. But concerning the Zev romance, there are a few different endings possible. It can be a little tricky to get the happiest one with him. Make sure he's at 100 approval with you before doing Landsmeet. Talisan will attack your party, but Zev will fight with you. Immediately after the battle, talk to him again. He should give you an earring. Make sure you take it, even though he says it's not a token of affection (it is...he just can't bring himself to say it). When the Landsmeet is resolved, go back to camp and talk to him there. He should say that he loves you in his own roundabout way, and you should respond similarly. Then, if you ask him back to your tent, he'll refuse. Go finish one more quest (personally, I like to leave the Dagna one for this purpose, as it gets me to Lake Calenhad and then Orzammar, giving Zev time enough to think). After the quest's conclusion, head back to camp and talk to Zev one last time. You should be able to say that he seems different. He'll tell you now that he's had time to think over his feelings, and he's completely devoted to you now. He'll also go back to your tent with you if you want. If you do this, you'll get a really sweet ending with Zevran.
