Despite essentially doing the same thing, Vega's response was MUCH better (and Ashley's was that much worse). Would have been better presented if they were actively skullf*cking a reaper or shooting at one.

There are so many great quotes throughout the trilogy but three that immediately springs to mind would be:

"Had to be me. Someone else might have gotten it wrong". Such an emotional and powerful scene and one of my favorite scenes in any game ever.

"There's a REAPER in my way, Wrex!" Such a funny line and great delivery by Mark Meer. Wrex's reply is great too.

And the third is Captain Kirrahe's "Hold the line" speech in the first game. Such an awesome and memorable moment as well.

I'll probably post more eventually because like I said there are so many great ones.
