I'm still expecting Morrigan's child to turn up in the next game and inexplicably be a griffon. Don't make me justify this leap in logic, I won't be able to.
How many people thought by the end of the game they would have a griffon?

Sounds to me like someone confused Dragon Age with Vanguard: Saga of Heroes lol

Well it really depends on your character how much of an aspect Griffins are associated with Dragon Age:Origins. There's certainly enough references to them.
For Example if your character is walking around for half the game in a get up like this or when or fighting for your life:



You being a Warden and wearing OFFICIAL Warden equipment; Then yea, despite the codex youre going to want to see how Bioware would model a 3d Griffin for the game. I wasnt expecting a mount or anything like that, but at least a cut scene or flashback with one would be a great thing to see.
Id definitely like something to do with Griffins in later DLC. Considering Wardens, Griffins and the Blight are pretty closely associated between each other, as you are building up the Wardens again, finding a hidden colony of Griffins, or a dormant griffin egg is far from ridiculous.
Shapeshifting into a griffin would be an interesting concept to explore too...

I thought griffons might make it to an expansion... like a hidden population of griffons that survived extinction.
I was also hoping (off topic) that we'd visit the black city... it's hyped up even more than griffons in this game, if you ask me.

I never anticipated riding a griffon, I figured they were a thing of the past and probly extinct and found it to be mostly true.

I didn't expect to see one and don't really think the world is open enough for the use of a mount.

It doesnt have to be a mount, it can be in a specific plot - related battle, where a griffin comes under your control for a particular battle. Like a summoned bear, only drake size and epically badass.
