This guide assumes that your PC can run Mass Effect 3 quite easily and you are not struggling for FPS as ambient occlusion can be resource intensive.
Mass Effect 3 does not have any ambient occlusion settings yet the engine fully supports it and you are unable to turn on ambient occlusion on in the Nvidia Control Panel, however there is a way to force ambient occlusion on to give the game much greater depth and more realistic shadowing.

Notice the walls and table have much more depth? Also notice you can no longer see Shepard's skin on her neck because the hair shadow is properly hiding it now? Of course you do because this is a big visual change.
Well now it's time to show you how to enable ambient occlusion in Mass Effect 3!
1. First you will need Nvidia Inspector which you can download here:

2. Next you need to run Nvidia Inspector and click on the small wrench crossed with the screwdriver beside the "Driver Version" row.
3. Now a menu will popup, go top the top left cornor and find Mass Effect 3 in the dropdown menu by searching for it manually or typing it in. If the game is not there, you will need to download the newest Nvidia driver.
4. Now that you are on the Mass Effect 3 profile, you must first go to the "Ambient Occlusion compatibility" dropdown menu at the top of the list and set this to "0x00000020 (Mass Effect)"
5. Next scroll down to "Ambient Occlusion setting" and select either "Performance", "Quality", or "High Quality". The names are pretty self explanitory but be careful on which setting you choose as ambient occlusion is a stressful setting.
6. Now go to "Ambient Occlusion usage" which is located right under "Ambient Occlusion setting" and change this value to "Enabled".
7. Lastly, go to the top right cornor and click "Apply Changes".

Congratulations, you have now enabled Ambient Occlusion in Mass Effect 3.

This method should also work in Mass Effect 2 but I have not tested it.
