Been playing this game for a while now, awesome. Simply amazing.
After Lothering, I went directly to Redcliffe taking Alistons advice. Did the village defend, barely, used all my health potions. The story then shoves me in the direction of the castle, I'm not sure I want to do it because I feel that I'm unprepared. I go anyway.
Once I get through some of the basement parts I get to the courtyard, I keep dying at this part. The Revenant is too difficult to get through, I only have 3 health potions, 2 of which are weak ones, and one normal.
My character is a rogue, I started out with archery but soon went into melee, who focuses on stealth and traping. Aliston is my tank, Morrigan has no healing spells, and my War Dog isn't that great.
I've tried the battle about 6 times, never had I gotten the Revenant down to half health. I'm thinking of backing out and doing some other quests, getting stronger, making some money and more potions. That wouldn't effect the castle quest right? I imagine there isn't a time limit on it. Would anything be affected if I ventured off to another city and came back to this Redcliffe Castle quest at a later time?

You can leave the Redcliffe Castle portion of that quest alone for a bit I believe and head off to do other things if you so desire. At least, that's how I remember it anyways. If no one tries to stop you from leaving the village area then you should be alright.
My advice would be to head on over to the Circle of Magi and get Wynne before trying to assault the castle again, given how much trouble you're currently having with keeping your party's HP up.

Nope. You're more than welcome to back out and get stronger. I think a lot of people do that. Before you do I'd try a few things.
1. Take out a bow. Hit the revanant from the doorway. This will just draw the revenant. Kill him next to the door before you attack anything else.
2. Once in a while, 1 doesn't work for me. I'm not sure exactly how to play it, where to stand to ensure the archers don't see you. So if this tactic doesn't work, have Allistair melee the revenant until he's at half health. Then drink a health potion. Then kite the revenant like there's no tomorrow until everyone else kills things.
3. Save the best for last, right? According to people you can open the castle door to your left and Redcillfe knights will join the battle and this trivializes the fight. I've gone through four playthroughs without knowing about this and I'm not doing redcliffe for a while on my fifth with my archer because I want the items I get in the Dalish camp quests and I want to do the Mage quest next so I can kill Wynne. So I personally don't know if you can do this but I"m 99% sure you can considering multiple people claim to have done it.

Don't forget once you get to the courtyard you can open the gates to let the knights inside to help you fight.

Your party configuration makes the fight difficult. You are melee dedicated with 2 characters: Alistair and your War Dog. The Revenant himself has a periodic burst attack that hits everyone around him. He also has sweeping attacks that hit multiple people in melee with him.
If you let in the knights, this will help tremendously. What I recommend is sending your main character and your dog to kill the archers above while Alistair and Morrigan deal with the revenant and the melee enemies.
The archers should fall relatively fast. If there are still a lot of knights surrounding the Revenant, have your main and your dog go in melee too because melee is better at single target damage than archery. If only 1 person is in melee with the Revenant, then stand back and shoot him with your bow.
You also really need to give Morrigan a healing spell, and I would recommend getting her the Spirit Healer specialization ASAP as you sort of need a healer. Running on potions alone is rough on your pocket.

The archers on top of the stairs should be aggroed first. Just run towards the wall directily beneath them, they will see you, but as you move directly beneath the wall, they will lose line of sight and run down the stairs towards you. Let them round the corner around the stairs and take them out fast, preferably leading with Cone of Cold. You should be able to defeat them without taking much damage if any.
Best way to take out a revenant is to use Misdirection Hex. Possibly with Cone of Cold for backup. With the revenant hexed, you should be able to defeat it without any heals or defensive spells.
