I love and hate this game.
My system:

I did not have to adjust anything else in game (not turn down graphics or turn off gore). This fixed it for me.

Same here. Though, sometimes, I never have to restart. And, recently, I haven't had any problems at all ... wierd. I do know that once I updated my drivers and started using Game Booster (highly recommended), and set the CPU affinity to one for the game, that cleared up most of the problems. Now it seems to be all good until I get into ginormus battles, but that is due to the fact my PC isn't super amped. Even then, it isn't that bad!
That being stated ... WE NEED-A A PATCH-A!!!

Then you don't have an answer to the question regarding the memory leak that effects the majority of people who own the game. Which also means, you don't have an answer.
Guess what that means?
Move on to another thread where you might be able to use the mush behind your face to write something useful.
I restart about every 45 minutes, sometimes I'll go for longer but once the load times hit about 6 minutes I'll just get frustrated enough to stop playing. I wish they would fix this because it's literally my only complaint, such an amazing game and I hate feeling like I bet my chips on the wrong horse and should have gotten this for 360.

Those with 4GB or less seem to see it.
It seems to me perhaps the large amount of RAM, + Pagefile is simply masking the efffect of the memory leak.
Even with large amounts of RAM, disabling the pagefile is a bad thing in general ... as many programs want one.
Im thinking Rayne's post may have something here as well
It could be centered around the pagefile, OR possibly, in some cases, VRAM on the GPU's themselves.
Just a thought in an effort to hopefully reduce to effect,
Not everyone has listed the amount of RAm on thier GPU's here, so just curious ...
Does anyone have 4GB RAm, a 1GB GPU with page file ON (2-4GB or auto), still see the problem?
Theres no doubt the issue exists, with all who have reported it. So, until Bioware can patch it, the best we can do is attempt to isolate it, and make adjustments to hopefully minimize the effect.

i7 920 @ 3.2ghz (my load temp 54C. Normal stock load temp 60-65C)
Radeon 4870x2 (my load temp 76C. Normal stock load temp 90-95C)
WIndows 7 64 bit
The memory leak seems to set in at almost random times for me, sometimes as quickly as an hour, other times I can have a long 4-5 hour session and only then it starts. Once it does start though, the load times grow exponentially. 1 sec, 5secs, 30secs, 2 minutes, 5minutes, 8 minutes, in game stuttering, restart game.

I am computer illiterate and have found no information on the benefits of being connected to a server. I have seen where xbox users get points and PC and PS users get other rewards of some sort, but havent found much information on those points.
Unless there is a real benefit for being logged in, I wont be and have had no problems with my game.
PS---Im not too fond of some company somewhere having access to my system and uploading/downloading things randomly without my instant knowledge.

Reload game itself after usually about 2-3 hrs.
when I discovered it was automatically logging into a server uploading
screenshots, etc. I turned it off. since then I have had no problems
running the game without interruption for 8-10 hours.
Yes I've noticed that helped a lot.

After about 1 hour, the load times get unbearable .. usually more than 1 minute to load into Denerim. And conversations can take 4 or 5 seconds to start.
Ive tried with both pagefile disabled and enabled, doesnt make a difference.
My machine is a dual boot of Vista64 and XP Pro. I play games in XP 99% of the time, including DAO. I tried Vista to see if the memory leak was better since all 6gigs of RAM would be addressable, but no difference. Then I realized, DAO is a 32bit application, so the maximum addressable RAM for its process is only 2gigs anyway .... so anyone with 3+ gigs of RAM is likely to never have RAM / Pagefile issues running it.
I think the increasing load times is bad programming on the games resource management, not technically a leak, since I never crash with out of memory errors, even after playing for 5 or 6 hours straight (I hate restarting). I also notice the maximum amount of memory DAO ever seems to use is around 1gig. I imagine they have some form of resource caching mechanism, that builds up over time to some pre-determined limit, but the CPU processing required to manage that cache does not scale well.
My 2cp worth as a programmer at least.
