Good idea.
But if they're quick enough, you shouldn't need to worry about the issue with getting attacked mid-animation. You maybe get hit one or two times before it's over. That shouldn't be a game-changed except on the highest difficulties.
Either that or maybe some sort of pause/invulnerability/damage resistance while the animation is playing. Kind of in the same way that Skyrim deathblows do it.
